Do you know if there is a way I can go back and basically "replay" my wipe from Rustafied Main from a few days ago? or do I have to recreate everything on a separate server?
You have to recreate everything on a separate server. If you the owner of the server you can get the same map that was on main. If u use the server used in the server u have to deal with that map
Only way to get real footage from server is from an admin recording demos for you

I figured it out!
can i quit the hud on the rigth to the screen ?
Type “demo.hud” in the f1 menu
Whenever I open the demo. it wont come out as a Cam it shows in 1st person.
Type debugcamera into the f1 menu
