  • This is a High Protein Vegetarian Recipe that gets ready in just 25 minutes. It packs the goodness of Casein Protein - benefits of which are illustrated in the video. Enjoy this delicious Home-style Punjabi recipe!
    Ingredients:
    Refined Oil/Olive oil - 1tsp
    Ginger and Garlic Paste (6-7 pods garlic, 5 cm piece ginger)
    Onions - 160 g
    Tomatoes - 250 g
    Paneer (Cottage Cheese) - 300 g
    Full Cream Milk - 200 ml
    Spices and Seasonings:
    Salt - 1 tsp
    Black Pepper - 1/2 tsp
    Garam Masala - 1 tsp
    Cumin Powder (Jeera) - 1/2 tsp
    Coriander Powder (Dhaniya) - 1 tsp
    Turmeric Powder (Haldi) - 1/4 tsp
    Red Chilli Powder - 1/2 tsp
    Compounded Asafoetida (Heeng) - 1/2 tsp
    Dried Fenugreek Leaves (Kasoori Methi) - 1 tbsp

Love the way you explain the 'why' in every step which is hard to find in recipe videos; also the small tips you throw in here and there.     Wow!, unbelievable! I've had butter chicken curry at restaurants probably over 10 times before, almost always at a different restaurant, and I've never been able to beat them with a homecooked meal. But I tried your recipe, replaced the paneer with marinated chicken, added some butter, and this was so much tastier than any restaurant butter chicken curry I've ever had. It had the same baseline flavor, but was just so much stronger, richer, and better balanced (The spices were so perfectly balanced in the ratio you provided, in other recipes and restaurants it's just a bit off you know, but this was just perfect).
    Thank you so much for the recipe, since watching your video I've now been making the curry gravy in bulk and save them in jars in my fridge, and it's been an amazing instant food to throw tofu into it and microwave for a meal that's well beyond restaurant-quality.

    This is great.
    Can you do a video on the basics of cooking for any gravy or masala.
    I always find my onions burnt or under cooked (despite using the water splashing thingy).
    Masalas also undercooked or burnt.
    But not balanced.
    All other videos only cover things like ("wait till the oil leaks, wait till it does that etc").
    But I never understand it fully what does that even mean :)
    So, from a technical perspective if you can do a video for us, that'll be great :)
    Lots of bachelors who are starting out will find it useful! We just can't figure out this shit!

    It is the same as ur chicken recipe without tomatoes and milk. I just wanted to know why you didn't fry the paneer first? And can we add capsicum as I usually add that with a pinch of white pepper and sugar. Try it:-)

    Sir, as much as I liked the effort that went into producing this dish, I couldn’t help but take issue with the fact that you’d put the powered spices (turmeric, coriander and cumin) after cooking the tomatoes, when common knowledge suggests that you never always roast these spices after the onions are done being caramelized, and BEFORE the addition of tomatoes. If one really wants to add these after cooking the tomatoes, one ought to add them pre-roasted. That is a subtle but an important difference. Salt, as you rightly did, should be put after the addition tomatoes since adding while the onions start to caramelize, would make the same, overly soft.
    My 2 cents.
    Anyways, big fan of the show. Have loved your other recipes- especially Dahi chicken, butter chicken and pizza dough making episodes.

    Nice video, but one question! Why did the the milk didn't get disintegrated because of sourness of tomatoes ?

      Aah - good question - this awakens the chemist in me! Think - onions. Onions have a pH higher than tomatoes - so when they mix together, they neutralize each other to a good extent. When we add the milk later, it doesn't curdle because you've already neutralized most of the tomatoes' acidity. Also, Citric Acid is Heat sensitive (decomposes at around 175 degree C) - and we've already heated up the tomatoes to a good extent.
      And yes I am a chemist technically on paper :P

    Paji, I tried some chicken recipes trick of yours in order to make chicken nice abd tender i.e.fiberless. Still, a nice tender chicken is yet a forbidden fruit for us, like we usually have it in restaurants; Precisely, in well standard restaurants.
    Request you to make a video on this especially for whole curry chicken.

      In restaurants they use just the thighs and legs in curries - which are kept marinated for a super long time. Breast pieces and curries are definitely not a good combo!

      I got an amazingly tender chicken breast two days ago. I cut it into thin slices (Say 1/3-1/2 inch) and then marinate in chili/garam/ginger garlic paste (Surprisingly, only for 15min the time I did it and it came out great, but I'd recommend overnight). Then I got the pan med-hot or med with oil. I'd say 1/5-1/6 inch oil deep, but it has to be a puddle of oil to slightly fry it in, not a drizzle. I did 2.5min on each side, and let it rest for 10 min (I made sure to drain out the oil for caloric reasons).
      Then i finished cooking it by simmering it in a butter chicken curry for 15 min (Any curry should work). Came out amazingly tender, but I don't know which step caused it to be tender, I think it was a combination of the thin slice marination and the fry that did it.
      Also, my gf stole a slice of a chicken before I simmered it and said it was great so I believe you can ignore the 15 min simmer and just use the chicken however you want after it rests for 10min

      I'd enjoy seeing him do paneer as well, but it is a fairly simple acid set cheese. Heat a gallon of milk to around 200 degrees f. Stir in about .5 cup lemon juice or white vinegar let sit till curd forms. Line colander with double layer of cheese cloth. Using slotted spoon gently scoop curd into prepared colander. Allow whey to drain. Once cooled lift curd from colander using cheese cloth, transfer to plate. Wrap curd tightly in cheese cloth.... looking for a square(ish) bundle. Place another plate on top and weigh it down..... press for a couple of hours.

      Refined oil is not bad for health. These days people just create random information to earn money. Just make sure that the oil you use has minimal 'trans fats' - because trans fats are artificially created fatty acids that your body can't process. :)
