  • Pasteurization or pasteurisation is a food preservation technique used to eliminate pathogens and extend shelf life. But how does pasteurization work? What foods are pasteurized?       Pasteurization is a process of heating food to a specific temperature for a specific time to kill harmful bacteria. It is a common practice in the food industry to extend the shelf life of food and to make it safer to eat.
      If you pasteurize food many times, the food composition will change. The proteins in the food will break down, and the flavor and texture of the food will be affected. The food may also become less nutritious.
      The effect of pasteurization on food preservation will also decrease if you pasteurize food many times. The more times you pasteurize food, the less effective it will be at killing harmful bacteria. This is because the heat will denature the proteins in the food, making it more difficult for the heat to kill the bacteria.
      Here are some of the effects of multiple pasteurization on food:
      Denaturation of proteins: Pasteurization causes the proteins in food to denature, which means that they lose their shape and function. This can lead to changes in the food's texture, flavor, and nutritional value.
      Destruction of enzymes: Enzymes are proteins that help to break down food during digestion. Pasteurization can destroy enzymes, which can make it harder for the body to digest food.
      Loss of nutrients: Pasteurization can also cause the loss of some nutrients, such as vitamins and minerals. This is because heat can damage these nutrients.
      It is important to note that the effects of multiple pasteurization on food will vary depending on the type of food and the method of pasteurization. For example, milk that is ultra-pasteurized (heated to a higher temperature for a shorter time) will be more affected by multiple pasteurization than milk that is pasteurized at a lower temperature for a longer time.
      If you are concerned about the effects of multiple pasteurization on food, you can choose to buy foods that have not been pasteurized. However, it is important to note that unpasteurized food may contain harmful bacteria, so it is important to handle and store it properly.

    Very interesting. In every discussion of safety, some reference of the risks vs the benefits would be helpful. For example, how many people die from consumption of raw milk, as opposed to how human health may suffer by drinking milk that has had the enzymes/good bacteria/vitamins taken away. In US states where raw milk is permitted, is there a noticeable increase in death/illness from common contaminants, or has it been handled with good milk handling protocols?
    Also, as an aside, I live in Australia which bans unpasturised dairy, but in recent years the importing of raw cheeses has been allowed. I am French though, and have never heard that raw products are becoming contentious in France.
