Before empires and royalty, before pottery and writing, before metal tools and weapons - there was cheese. As early as 8000 BCE, Neolithic farmers began a legacy of cheesemaking almost as old as civilization. Today, the world produces roughly 22 billion kilograms of cheese a year, shipped and consumed around the globe. Paul Kindstedt shares the history of one of our oldest and most beloved foods.

I love how 99.9% of human cuisine history is "I'm gonna eat this thing and see if it kills me". The other .1% of it is "Even if it does kill me, we'll find a way to make it edible".

Anyone know what was the 1st human exclusive food? I mean the first food that human eat that was not eaten by any animals? Was it alcohol or cheese or what?
@@Napoleonic_S I would assume the first human exclusive food would have something to do with fire, maybe as simple as fire roasted meat, seeing as control of fire really separates us from other animals. Also, alcohol is not exclusive to humans, elephants also indulge

Yes but cooked food isn't what I had in mind, I'm asking about new kind of food that require human intelligence to make. Roasted meat is still meat, while alcohol isn't the same as what were the original ingredient.

What I want to know is how'd they keep cheese from spoiling back in the old days? I know that cheese needs to be aged to become cheese, but there is a difference between cheese aging and cheese spoiling, how'd they keep the latter from happening?

Think of it like the lumas in Super Mario Galaxy. They just view what you'd call 'death' as the next stage in their life.
First they're being produced in the teats of an animal, which becomes milk that then gets harvested by humans
Next they evolve and become soft white globs
Then they become processed and turned into cheese
Cheese is consumed by humans which comes out the other end
That other end could potentially become compost for the soil
Soil becomes fertile and grows grass, which an animal can eat to produce milk
And thus the circle of life continues

I always end up coming back to this specific ted ed video and I think it's because that not only is the animation adorable, but there's something so comforting about learning about our ancestors making food that we still love today. Cheese is just so universal and has been for ages, it makes me feel bonded to millions of people in the world I haven't even met

Cheese arose by accident n experiment. The sandwich came about from sheer laziness n convenience. Not so surprising considering ppl have been devolving for a long time

I once made fresh cheese. I had some kind of yogurt and mixed it with milk. I didn't turn out to be good so I wanted to try out making cheese. I then put it in the microwave for 10 minutes. It became cheesy so I repeated what I had done for 2 more times. It kind of exploded so I had to clean some stuff up but anyways, my mom said that it wouldn't be good and I proved her wrong. I put the 'cheese' for around 20 minutes in the fridge, I also had put some sugar when i tried to make some yogourt. My mom liked it.

I wish you would've mentioned the Pictish Crowdie Cheese. My Grandmother used to tell me stories about how, when she was growing up, her family had a milking cow that kept them alive through the Great Depression in the US, she even told me about her Irish Mother's homemade cheese recipe, sour milk hung from a stocking overnight. When I recently discovered a XIX C. recipe for Scottish Crowdie Cheese, I realized that it was the same recipe that my Irish Great Grandmother used to make. And now I've revived the tradition and make my own cheese.
