    Down in South Georgia we use a corn cutter and cook it in bacon drippings while listening to Dixie.

    I’ve never had pan fried corn. I live in the panhandle of Texas. We grew up eating corn that we put up in the freezer. My mom used a corn scraper that would cut the corn off the cob and then she would scrape it a second time to get the milk. It was the only way I’ve ever had corn. One year my granddaddy showed up in his station wagon with 700 ears of corn for us! I’ll have to try your fried corn! It looks delicious! Thank you so much for sharing your recipes and techniques!

    Thanks for this! It looks like what my grandmother used to make. I never could remember exactly how she did it. I do know that she made a roux with the flour and water before she added it to the pan. She used bacon grease instead of vegetable oil too...in the South you always save bacon grease. :-) And we used the Bundt pan...lol.

    the music is awesome! I grew up listening to Mama Cass thanks to my parents. What some people don't understand is that record players/turn tables are naturally that loud, which is why many people either had the player in a separate room or cushioned the speakers with towels. Awesome corn recipe too by the way, I made it earlier for breakfast but I added some left over spinach to mine. lots of love to ya from a fellow Michigander.

    My dad is from the deep south & he use to fry corn with this country ham he got from somewhere. I really don't know where cause it didn't look like anything you can find in a regular supermarket. I do remember it was in a cheese cloth draw string bag & was really smokey. Anyway he would fry up some of that ham up & then fry up fresh corn off the cob in the grease from the ham. DELICIOUS!!!! I haven't had anything like that for quite sometime. You guys might want to try frying some corn in bacon or ham grease with a bit of minced onion next time.

      The country ham with the ham sounds so good! That is something you seldom see here in Michigan. I like your idea about bacon fat, and will give that a try this summer when the fresh corn starts coming in. Thanks for watching!

    This is how my mother cooked and prepared her corn for frying...she'd never...never use canned corn...you got to scrape the cob.

    Thanks for watching and for subscribing! A friend of mine showed me that trick using a tube pan many years ago, but I found a Bundt pan easier to clean so that's what I use. Great hearing from you!

    On one of Anthony Boudain old shows he was at a big private get together some where in the south and they made a dish similar to this, - fresh corn, garlic, onion, chopped bell peppers, and little pieces of tasso (can substitute smoked ham for the tasso); and he raved about the dish. Since it was a big crowd the gal was cooking it in a very large, iron skillet.. I've never had tasso although I see that I can order it on line. I think it may have a kick to it and a flavor all it's own, so I'd like to try it next summer. Thanks for your shows, I've been enjoying them. Another Mamma Cass fan here.

      Cavalcade of Food I agree with Leshonda. I love Mama Cass, too, but she made it a little difficult to understand you. The right level for the music would actually be zero. However, I do love your cooking and have had success with many of your recipes.

We always try to find the right balance between the music and our voices, but sometimes - as you know - the music is too loud.     A. I think this looks closer to the WONDERFUL corn a friend served when I lived in Ft Wayne, Indiana long ago than any recipe I've tried. Corn season has begun out here so will be making it with my next farm stand run.

    This is similar to how my mother made her fried corn. I can't wait to try this recipe. She fried her's in salt pork drippings and used a little hot green pepper. And if people don't like the volume of the music turn down ur device and turn on the captions !

    You know I love pan fried corn. But I learned my lesson about using the backside of a knife! I cut myself so from there on I use the frosting knife which does a beautiful job too. But I love your stoves your music and your kitchens I love your cabin too

    We will definitely try this recipe :)
    How we make it is just boil the corn kernels for 10 minutes and strain .
    Then in a pan add some good amount of butter , let it melt , then add the corn kernels .
    Sauté for a minute or two , then add about a tablespoon of lemon juice , then red chilli powder , salt , a few more spices and it's ready to be relished 😄
    Some people add grated cheese to it 😊

    The only thing I would do differently would be I would use real butter, which is way better for you then veggie oil. But all in all tysm for sharing your good time with us.

    Good recipe. I might leave out the scallions and add some cream at the end for creamed corn. Cass Elliot in my opinion was an underrated singer equal to the best pop singers of her time. Cass Elliot liked to eat the food while John Phillips and daughter Mackenzie preferred the drugs to the food.

      Sharon Harris I love his videos, too. Maybe your hearing is perfect. I am probably quite a bit older and my hearing is not so good when there is a lot of extraneous background sound.

    Nice Video gentlemen! I really enjoyed watching this and now I am craving corn (thanks a lot!). I am making this soon. Since corn is not yet in season here in NM, can I use frozen corn? I know it won't be as good but it's a start. Love the Mama Cass music!

      Hi Kelly - thanks for watching! Yes, you can use frozen corn when fresh is out of season, it might not have the same texture but it should work. Wasn't Mama Cass great?
