  • Fried Skillet Corn is field corn cooked in an iron skillet. Danny corn that we planted and harvested this week. Most field corn is left to dry in the field but we harvest it when it is still creamy and fry it in a skillet.

    Looks great, I do this with sweet corn and add green pepper and onion with just a touch of sugar to it. Fried up in butter

    Waanda, it does my heart good to hear that you have a separate skillet just for eggs. My grandmother and my mother had a dedicated skillet just for eggs and woe be the one that used a egg skillet for something else. BTW fried corn is wonderful just by itself or with refried beans and enchiladas.

    I love field corn . you just have to cook it the day you pull it. when I cut the corn off the cob I save the cob and boil it down and I make jelly from it

    Our family mostly preferred field corn over sweet we usally fried both half and half in a skillet.

    First video I've heard mentioned purple hull peas. Most people think that blackeyed peas are the only peas. But, i like a blend of purple hull and calico crowders cooked together

    My dad used to plant an 1/2 to 1 acre of corn on a marginal ditch bank by the house for us to eat off of and put up for winter.
    Ifvgot too hard he'd put a fence hot wire around it and put a few feeder pigs and a feeder calf in it to hog it off

    Hmm, I make something similar for the family. I roast the corn off in a pan the same as you do. But add some Mexican seasonings as well as a seeded diced up jalapeno. The family loves it. I serve it will my famous mayonnaise baked chicken breast.

    I grew up on field corn we go out there and check it make sure it was ready for picking we had to get it before the cows got it thanks for sharing

    Best corn in the world. We can’t find it in Georgia or Florida. I cook with butter. And milk the cob.

    Sure looks good. Now you need wilted lettuce with fresh green onions and streaked meat drippings. (for those that don't know streaked meat is lean bacon) My mother-in-law taught me how to make wilted (leaf) lettuce and fried corn dishes. Oh yes, also time for poke salad greens. She would boil/cook the poke salad greens, as usual, let them cool. Great for using leftover poke greens or just the cooled cooked greens, then fry them in bacon grease same way you fried the field corn.
    There was an old saying, when the guys stayed out too late, usually they had all been out behind the barn sampling their latest brew, they always said they were out picking poke salad, only they never seemed to pick any. Us kids knew exactly where they had been.

    I use salt pork, leave some of grease for flavor. Don't like coconut oil or n.v butter.

    Oooh Danny! That's the "Kiss of Death", (this Danny corn has no worms.) That's likely to make them appear in a tidal wave all over that field!! It's strange how it's such a pretty, pale, consistent colour on the cob, yet dried out, it's every colour of the Autumnal Rainbow from White to Orange to Brown and every colour in between. The first skillet of Fried Corn from your own fields must be a huge treat every year, I bet you've been dreaming of this! When you have to move it so much during the cooking does it ever get a crispy fried texture?

    Love fried corn and LOVE my cast iron pans! I have one just for cornbread, one just for eggs and of course the fried chicken pan and a few more for different things~I may have a cast iron addiction...lol

    What varieties went into this "danny corn"? Looks really good.
    I've never had it made with field corn but going to try and grow some this or next year. Not sure which variety to grow. Hickory King, Hickory Cane, Trucker's Favorite? I've always made it with canned sweet corn onions garlic cumin cayenne and sometimes some hamburger meat to make it a meal, over rice. But I bet it's much better with the fresh corn. I do remember eating corn back in the 60s that tasted more corny and less sweet. Not sure what exact kinds though. I was a little kid in west TN.

    looking delicious. grandma would use the sweet corn when it got older. one way of cooking corn I will never forget the first time I ate this. field corn in Illinois is a no no. Can I trade you several types of corn I have made for a pk of Danny Corn? my red corn has got more stable. made it for an all around corn.have a super tiny yellow popcorn, and a red. bred the strawberry popcorn into a yellow now have the small ears with tiny yellow corn. is stable. I have a pkg of corn and maize coming from Peru Dept. Of Ag. 30 types. one the original sweet corn. being cornice is cool these days. thank you.

    I have seen your video on seasoning cast iron pans, but is that egg pan seasoned differently? I have one pan that I cook eggs only in as well. My everyday cast iron is about the same size as the one you're cooking the corn in. Do you season that one after every use? P.S. I watched the video for the corn recipe. Thank you!

      No I don't season the skillet after cooking. It is seasoned fine. I just wash and dry really good. Sometimes I put it in a warm oven. But I always rub them in oil after they dry. The egg skillet has been used for only eggs for the past couple of years and I don't let anyone use it for anything else. The eggs just slide around in the skillet.

    Danny I got some Danny corn from you. How many days did you let the corn grow before you pick it. I know the day I planted mine, so I want to know when I can pick it for eating. I realize it might not be the same but at least I'll know when to start checking

    yummy corn! :-) Wanda..I have a fairly new glass top stove top and I was told NOT to use my cast iron pots and pans on it cause the glass can crack from the heat and also ...or... scratch the glass....so I stopped using it...I LOVE my cast iron...I miss using it.. in my kitchen...it seems to be working ok for your stove?

      mawpatti We bought our stove in 2003 and have been using cast iron on it every day with no problem.You just have to use common sense dont drop something heavy on it.Thanks

      wow thats a long time 2003...actually its not the dropping the heavy part that they were talking about its the heat from that type of stove would be too strong and could crack the glass because the cast iron has a high heating level too...the store sale person told me that one...and the scratching part as well was at the store..I had done some research on those two things and sure enough it said the same thing...I miss my cast iron :-( so me seeing you use it ...I was excited to know if you ever had any problems....I am thinking of trying a frying pan and see what happens! :-)

      pms1953 You can use different kinds of oil to cook it in.We just saute the onions until they are clear.Then add the squash and season to taste and cook till tender and done.Thanks

    I love using left over corn on the cob and frying it in butter gives it a really good taste. Thanks for sharing with us how you do things on the farm. I have never used coconut oil before can you tell the difference in the taste of things?

      I don't notice any difference in the taste. Maybe we are just used to it. But most oils don't offer much difference to me. Butter is always a great option for frying corn. The taste is terrific.

      My mom fried corn in bacon grease. Not healthy, like coconut oil, but the smokeyness of the bacon grease is unmatched. and butter was added too. no wonder the health problems of the south. lol One of my favorite southern tn meals was, fried corn(cast iron skillet), fresh green beans(in cast iron dutch oven), stewed new potatoes, fried chicken (fried in the cast iron skillet), fresh, home grown tomatoes, homemade bisuits, baked in cast iron skillet. I an make a meal out of just the fried corn and home grown tomatoes.

      I don't think the health problems were caused by what we ate, it was from the hard sun up til sun down work. Homesteading is one of the hardest, lowest paying jobs in America.

      Grandmas Homestead. I sorta disagree. I think it was the long hours of hard work that kept the bacon fat and lard fried foods from killing them. It was what could sustain them to do the long hours of work. It became a health issue when folks began to move off the farm and less physical labor, but continued to eat all the fat and calories, as if they still worked the field all day. Actually most will eat more calories than the farmers did, because they have the ready made foods waiting for them and they have more time to eat it. But those days were grueling. So much so, that when my dad left the farm as a teen, he never farmed for a living again. He raised a big garden every year, but that was it. Growing up during the depression on a rocky clay soil in the hills of TN, was enough for him. I can only imagine how crazy he would think of all these people wanting to live like he once did. I think the difference is in the choice. He did not have a choice. Choosing to homestead is different than being born into it and not having a choice. Farming and homesteading is very hard. These days, you cannot really earn a living by small family farming. You will need to have another source of income to buy the things you need to run the farm. I know of no small family farm that does not have some income coming in from somewhere beside the farm. Usually someone is working a job off of the farm to supplement the farm income. OR maybe income from pensions, retirement, or investments from the time they did work off the homestead. I do agree with you on that. Homesteading is very hard and low pay. Sometimes it does not even pay at all.

    THANKS for posting! wow, just found this video. i love corn and cast-iron cooking, so i just subscribed too. i figure the small handful of insignificant people that have your video a thumbs-down are crazy environmentalists that believe taking corn from a corn stalk is murder. my family gives yall thumbs up all the way!!!
