Classic English Custard Tart Recipe | Cupcake Jemma

- Guess who's Back?! Cupcake Jemma herself is here with a total classic: English Custard Tart! If you've never tried making one of these before now's the time - crumbly, flaky pastry, jiggly, rich custard filling... It's out of this world.

For a deep 9" Custard Tart
Preheat Oven to 165C fan assisted (185C no fan)
For the Sweet Pastry case:
250g plain flour
60g caster sugar
160g cold butter, cubed
Pinch of salt
2 large egg yolks
For the Custard filling:
Reduce oven temp to 130C fan assisted (150C no fan)
750g double cream
115g caster sugar
13 large egg yolks
Pinch of salt
1 tsp vanilla extract
Whole nutmeg for grating

Welcome back, Jemma. I learned a few things: Jemma still has great camera presence, never let sugar sit on egg yolks, there is a difference between jiggly and wibbly-wobbly, and Sam DOES NOT like a soggy bottom. Thanks for sharing this with us; it looked delicious.
Nobody likes a soggy bottom.🤔🤣
If anyone else doesn’t have a deep pan, I used the following quantities for the filling:
- 7 egg yolks
- 60g sugar (25g in the cream, 35g in the eggs)
- 400g double cream
My tin is 9” wide and just under 1.5” deep. Hope this helps!

A little tip for you guys . ( its for all tarts which use a custard , And i think a lot of you already know ) When you pour the custard to the tart shell , sieve it to the tart. that way you can get rid of any lumps in your custard .

So good to see you back and you look to be in top form. So happy you had a baby- need to pass your talent and skills to the next generation. I love a good custard tart with lots of nutmeg. I live in the American South and it gets quite hot in the summer- so I like the custard pie cold and served with fresh berries.

Awww Jemma welcome back…..that custard tart has bought back, so many wonderful memories of my nana and my mum baking this,
I have 5 grandchildren, and I’m teaching them to bake and cook meals, for some reason I have forgotten this one, so this Saturday with 2 of my granddaughters aged 4 and 6 I shall enjoy baking this with them.

I remember making this at school back in the 60s. We had to pour in a little custard and bake, then go on adding a bit at a time and baking it till it set. Such a faff!
