Oh hey - welcome along to the Cupcake Jemma channel. I'm Jemma and I run Crumbs & Doilies, a London-based purveyor of awesome cakes and cupcakes, and every week I'll be uploading a new cake-based recipe or how-to video for you to enjoy. Everything from classic bakes, cakes and cupcakes to essential decorating tips and tutorials, as well as some behind-the-scenes goings-on from C&D and what the guys have been up to. Decadent Millionaires Shortbread Cupcakes Recipe | Cupcake Jemma
We're back with another delicious cupcake recipe that will blow your socks off - not literally OBVS, but figuratively - YES! The Millionaires Shortbread Cupcakes are honestly the stuff of dreams, buttery shortbread biscuit base, decadent chocolate mud cake sponge filled with homemade butterscotch sauce, topped with butterscotch Swiss Meringue Buttercream, studded with shortbread biscuits and dunked in dark chocolate - finished with a little gold leaf because why not!?

300g Double Cream
½ tsp Vanilla Extract
Pinch of Sea Salt
CHOCOLATE MUDCAKE SPONGE
100g Crushed Shortbread Biscuits
15g Melted Butter
1 tsp Golden Syrup
100g Unsalted Butter
50g Brewed Coffee
125g Dark Chocolate (70%)
75g Buttermilk
45g Vegetable Oil
2 Eggs
215g Caster Sugar
150g Plain Flour
30g Cocoa Powder
¼ tsp Bicarb
¼ tsp Sea Salt
BUTTERSCOTCH SWISS MERINGUE BUTTERCREAM
150g Egg Whites
300g Caster Sugar
360g Soft Unsalted Butter
180-200g Butterscotch Sauce
TO FINISH
4-5 Shortbread Biscuits, chopped into small nuggets
60-80g Dark (54%) Chocolate, melted and cooled a little
Gold Leaf (optional)

😢 my cupcakes sank in the middle 😢 I followed everything correctly , although maybe my butter was way too soft ?
It looked like it was too cooked in the center opposed to all the other videos. I've watched it was more creamy. This one looked a little like regular cheesecake in the center maybe cooking it for just a little less time.

3:37 - "We are just combining - we're not beating, or folding, or anything fancy" - So.... then what are you doing with all that mixing action? Combining is putting the egg in and leaving it. That's combining. Like when you combine two bags of sugar, that normally means just "pouring one bag into the other". So you ARE actually BEATING the mixture. You may not see it as such, but it is the most accurate description of what you're doing. Mixing would also be a more appropriate term.

How do you get the buttercream to stay on the cake when you’re dipping it in the chocolate?
Maybe give them 5-10 minutes in the freezer right before you do the dipping part

“Fluffy” New York cheesecake? Do people just not know what that word means anymore? A dense custard like New York cheesecake is not “fluffy”. Also the cheesecake here looks super dry and you can tell because after a very short chilling time it slices far too neatly.
How thick your meringue is before adding butter? With my hand electric mixer, mine usually doesn’t get quite to stiff peaks but more like soft peaks

I've seen this technique before for other designs but not for marbling yet. It's awesome!!! I love the way it looks and there this part of that kind of looks like a man running. It's really nice!
