Made it today. It is super delicious! So silky smooth it's absolutely amazing! I used Aya Caliva(pastry chef mum) recipe for the pastry tho. Her pastry recipe is so good with this. And get this... no need to blind bake it! Definitely keeping this recipe and her sweet pastry recipe to make a super egg custard 👍

Thank you for the temperature cue. Very useful, I wish more baking recipes gave the internal temperature instruction.
No problem at all :D Temperatures really are the key to successful baking (and cookery in general) so i'll try and get more into my videos. I've got a brownie recipe coming soon that uses temperature for the right amount of gooeyness.

I don't have a stone, do I still use same time and temperature pls, having a bake off on Saturday to compare mine with my brothers lol, sceptical about 2 nutmeg, I think I've only got loose nutmeg, how much of that and will it taste the same as fresh as I don't really want to go out unnecessarily, thanks for sharing fingers crossed for me x

2 whole nutmeg is absurd
Best way is to use the same temperature and time and then check it’s ready as he suggests as the stone will decrease the cooking time if anything. Btw, a pizza stone or even a ceramic tile would also work very well but it’s not necessary. I’m unsure about the quantity of nutmeg, I do like it on custard tarts but I have never seen so much used. Generally I will try all new recipes exactly as the recipe suggests and then make changes next time if it doesn’t suit my taste as otherwise you might never know how nice a recipe tastes if you don’t make it as prescribed the first time. Pre-ground nutmeg generally isn’t going to be as fresh and will have less flavour however, nutmeg is a very strong spice and generally you use very little whether it’s freshly ground or not. Lastly, my mum always taught me to never cook a recipe for the first time for important occasions, you are always best to have practiced beforehand. 😊

It's just a Bosch single electric fan oven. Fancy control panel though and the heat is very even!

Slowly Mix then Seive.
No Butter / No Vanilla / No Prebake Crust ??? . . . ok

@@Flyingluis oh ok thankyou :)..I want to try yours as I've tried someone else's tart and the custart shrinks a bit doesn't look as good as yours...but they just put the egg mixture in straight there's no heating the cream like you did..and it's only 3 eggs too

They can take longer, just depends on your oven and 2 would certainly need a little longer. Just keep an eye on them

Can I ask, how do you prevent the pie crust from browning too much while cooking it with a filling inside? It looks beautiful after blind baking, but wouldn't another 30-40min in the oven with a filling inside make it too dark?
He baked the tart at a very low temperature.
You have to use nutmeg when you make this, not cinnamon, not no spices, it's not the same without nutmeg
