It's the pressing of the burger once it's really cooking that makes it dry, not when it's still raw. Pressing when it's raw doesn't make it loose it's liquid.

That's what characterizes a ''smash'' burger though, the pressing JUST as it hits the skillet into a thinner than usual patty. The idea is that it cooks more evenly and can be make crispier on account of its thinness. It's how they make them in many diners and some people just prefer the smash burger style. The trick it to smash it at exact moment though, so you don't actually lose the juices.

My oh my her way makes just the most incredibly delicious, out of the world burgers because of the tomato jam. The recipe is so different.

My advice for all true burgerlovers - firstly always put the lettuce and only after the sauce becsuse if you do the other way around bun soaked all sauce and become wet, moist and you lost all crispness of bun and sauce, but if you do like i say you save the crustness of bun and juicy sauce in your burger thanks to the lettuce partition)

The sauce is oil-based and will not make the bun soggy, it's the opposite. The lettuce can be a little wet, and will make a soggy bun.

You are correct. You also should never put lettuce right on the bun because it will become wilted.
I see your point of view friend. I put my sauce on first because I can distribute it more evenly that way. Usually I eat my burgers right after I make them so there is no time for the buns to become soggy.
When I make other people burgers I get all the condiments and dressings ready and let them build their own how they like it.
My super burguer I use:
Grounded ribs (that’s already 80/20);
Gorgonzola melted with heavy cream and black garlic;
Arugula;
oven baked pancetta;
Thin sliced tomato;
French bread bun (most popular Brazilian bread).
You should try it, Tasty.

I roll my seasonings into the meat, forming a meatball and then I flatten it and cook it. That way the flavor is all the way through and not just on the top and bottom.

These recipes really differer, Kiano is like 'don't press down the burger!' the Alexis is like, 'Take two spatulas and press down the patty.
Fantasy Slimes Kaino was taking about after it had already formed a crust if you were to press down then the all the juice would go out of the burger, but in Alexis’ burger she smashed it down before it formed a crust. Therefore there wasn’t any juice to spill out yet they both just used two different techniques for cooking burgers. Kaino didn’t have to smash her’s because it was already formed in the shape she wanted when she put it in the pan. Alexis’ wasn’t so she smashed it down in the pan to get it to the thickness she wanted. That is called the smash burger technique.
no actually. alexis pressed down the patty to shape it *before the burger cooked and formed a crust* while kiano had already shaped it before the cooking part. kiano told not to press down *after the burger cooks* because it would dry the burger. that's not a style difference, it's a big mistake that no professional chef would do. brandon above me explained it much better than me tho

When you press it down at the start, you open up the meat and the holes all get crispy and nice, lots of surface area. If you press it down at the end, you break apart the crust you made, and all the nice juices leak out.

So I made Kiano's burger in quarantine for my fam cause we were craving it badlyyyyy!!!! And it was definitely APPROVED AND LOVED BY EVERYONE...!!! The tomato jam 👌🏼 I added a little bit of paprika in it.. and I made a burger sauce with mayo, ketchup,garlic paste,paprika,lemon juice,salt and pepper..
My fave is the last one the cheese is My favorite type and I loveeee Ketchup and Mayo!
