  • Do you say PIMENTO cheese or PIMIENTO cheese? It doesn’t matter, because whatever you call this classic southern cheese recipe, it’s plain delicious, and super easy to prepare. Mama Redbuck made a pimiento cheese spread, and then I made a jalapeno cheese spread, so check out both dishes and let us know which you like best.

    Pimiento Cheese Spread Ingredients
8 oz freshly shredded YELLOW CHEDDAR CHEESE
    4 oz jar of PIMIENTOS
    2-4 Tbsp MAYONNAISE (to taste)
BLACK PEPPER (fresh ground pepper is nice)
How to Make Classic Pimento Cheese
Shred the yellow cheddar into a mixing bowl. Definitely use freshly shredded cheese for this spread! Check here for current prices for a Box Grater on amazon amzn.to/2LT1hIZ
Drain the pimientos and add them to the cheese.
Add mayonnaise one tablespoon at a time and mix until the spread reaches the consistency you prefer.
Add black pepper to taste. Freshly ground black pepper is ideal for pimento cheese spread.
    Jalapeno Cheese Spread Ingredients
8 oz freshly shredded WHITE CHEDDAR CHEESE
    10-15 pickled JALAPENOS (to taste)
    MAYONNAISE (to taste)
How to make Jalapeno Cheese Spread
Shred the white cheddar into a mixing bowl. Use freshly shredded cheese for this spread!
Drain the jalapenos and add them to the cheese. I like to use whole jalapeno slices, but you can chop them if you like. It won’t make a difference, the pepper cheese spread will be just as spicy either way, so I suggest leaving the slices whole, because it makes the spread look better.
Add mayonnaise one tablespoon at a time and mix until the spread reaches the consistency you prefer.
And that’s it! Two very tasty and easy to make cheese spreads. These quick cheese dishes are great on crackers, in a sandwich, and as a dip for sliced veggies. Give each one a try and let me know which you prefer!

we had spam occasionally when I was a kid and I never loved it, but I've found an appreciation for it later in life...when we lived in Seattle we would eat spam for breakfast quite regularly. There was a Filipino restaurant in our neighborhood that served spam for breakfast...it was 2 slices of fried spam with rice, two fried eggs, and a few small sheets of dried nori...all for $5.50!...that was a hard deal to beat in Seattle

@@ChefBuckRecipes my mom raised us on a rural teacher salary in WV. We didn’t have money to go on vacations but in the summer she would take us on impromptu picnics... a quick stop at the grocery for a loaf of bread, potted meat, chips and snack cakes. Off to a roadside picnic table and we were happy as clams.

Grew up in Wisconsin - so cheese is life and cheese spread is an essential element of any supper club salad bar trip. For years, I've been fascinated by pimento cheese - and you know what? Mama Redbuck is the BEST! And she’s right...down here in the south, way out in the country, sometimes the prisoners get loose. Grew up with that and they were almost always captured near where we lived. Haha!
Pimento cheese is the best. I add a lot more stuff to mine. I add cream cheese, cheddar, Colby jack, mayo, a dash of chipotle hot sauce, a dash of Worcestershire sauce, and anything else that sounds good. There is no bad pimento cheese. It’s ALL good! Thanks Mama Redbuck!

I grew up on Mrs. Grissom's pimento cheese and homemade pimento cheese. In the mid-late eighties my grandmother would receive a monthly allotment of three five pound blocks of govt. cheese. I would go and stand in line for her and she would keep one for herself and give one to her next door neighbor and one to me. My roommate would grate the cheese and mix it with Miracle Whip and Pimentos from the jar and a tablespoon or so of horseradish. It made the most excellent pimento cheese which we would consume on our night shift jobs over the course of the month.

My husband likes spicy foods but he doesn't like pickled jalapenos. I will make this for him with the pimentos and fresh jalapenos and maybe a dash of black pepper for seasoning. Thanks to you and your Meemaw for this recipe.

I've known about pimento years cuz my grandmother, mom and aunt would make it from time to time. They're from Louisiana.

Chef loved your Mama Redbuck - these videos are always my favorite - family and their history is a winning combination - she has presence... I'll bet she fixes her some jalapeno cheese spread after you left - she had the look - me thinks she did protest to much! Really likes..."I just wish you would hold the camera like it was valuable...I am I've got it..she is precious!

It did my heart good to see that I’m doing it like her! And since I’m from the north I originally made it with miracle whip-that didn’t taste right so I went out and bought some mayonnaise and that was better. But; yesterday I bought some “DUKE’s” mayonnaise for the first time and it is PERFECT! Duke’s is better than all the other mayonnaises! Now I have to try everything else with it too.

I agree with Mama that your cheese would be too hot for me. Never had pimento cheese either but I'd try it. I got a laugh when Mama said you don't pay her enough when she took over CG's job. 😂

the cheese really helps cool the pepper down...although my mama might disagree with the use of the word "really"

I never thought about spicy pimento cheese until Palmetto Cheese from Pawley's Island, SC, put out a pimento cheese with jalapenos. It is really good. You could also make pimento cheese with pepper jack cheese (could use half of that and half sharp cheddar).

  • @CherylLily7003

My husband really enjoys pimento cheese(that's how we call it.) Now I can whip it up easily at home with pantry ingredients and the Duke's and cheddar that are always at hand. We live pretty far away from the closest supermarket, so he's no longer out of luck if he doesn't put it on the weekly grocery list.
    Thank you.

She’s a keeper and I want some of her recipe, the pepper variety looked tasty as well! How about some pepper pimento spread, your moms recipe accept replace black pepper with Jalapeños and maybe a little chopped cooked well bacon 🥓
