SOUTHERN PIMENTO CHEESE WITH QUICK REFRIGERATOR PICKLES

  • SOUTHERN PIMENTO CHEESE
    2 cups shredded sharp or extra-sharp cheddar cheese
    8 ounces cream cheese, softened
    ½ cup mayonnaise
    ¼ teaspoon garlic powder
    ¼ teaspoon ground cayenne pepper
    ¼ teaspoon onion powder
    1 4oz jar diced pimentos, drained
    Salt and pepper to taste
    In the bowl of a stand mixer fitted with the paddle attachment, mix the ingredients together until combined and smoothed. Taste for seasoning. Chill before serving.
    QUICK REFRIGERATOR PICKLES
    Adjust to make as many as you want!
    1-2 seedless English cucumbers, sliced thinly
    1 red onion, quartered and cut into thin slices
    Several cloves garlic, removed from their papers
    White vinegar or vinegar of your choice
    Whole peppercorns
    Fresh or dried dill
    Sugar
    Salt
    A variety of glass refrigerator jars with tight-fitting lids
    In each jar, layer sliced cucumbers and onion slices, adding two cloves of garlic in each jar. Fill jar halfway with vinegar. Finish off the jar with water. Add a teaspoon salt, 2-3 tablespoons sugar, a teaspoon or more of dill, and a teaspoon of whole peppercorns to each jar. Secure lids and shake the pickles gently but well enough to dissolve the sugar and salt. Remove lid and taste for sugar, dill, or other seasonings. Season as needed. Refrigerate for at least two hours or more before serving. Store in refrigerator for up to 2 weeks.

    I love pimento cheese. My grandmause to bring it up from Florida to us their was a brand we loved. She didn’t make it home made. We ate it on toast in the morning. 😋.

    This is how I make my pimento cheese! You are right it is wonderful! I don’t drain my pimentos though because I think it just adds to the flavor. When I was little I tried some store bought pimento cheese and I hated it. But I really did not like cheese until I was an adult😉. I thought I would try making my own pimento cheese one day and I’ve never looked back! My whole family loves it!

      My husband is the total opposite. He got so used to the store-bought kind, he doesn’t like my homemade kind. Now I’m questioning his taste. 😂

    I just found you on CZcams, you are a doll, I love all these Southern recipes. I grew up in the middle of Washington state and I don't know how my mother found them, but my mom made pimento cheese sandwiches as long as I can remember. Thanks for the good memory.

    I grew up in the West but lived down South for many years. I was seriously craving some pimento cheese and made a bowl for my Non-Southern family. No one wanted to try it as I was making it, every thought it was gross. However, once they tasted the final chilled version, it was gone in an hour!! WOOHOO Southern Cooking!!

    Love pimento cheese. In the summer it was always in the refrigerator. I am 84 and still love pimento cheese. Cream cheese never went into to pimento cheese, it is something newer.

    I am 53 yrs old, from Wisconsin and until this May 2019, never had pimento cheese. I was visiting my son in Mississippi. I almost had a private moment in a crowded restaurant. HA HA HA! A very definite "When Harry Met Sally" moment.

    Pimento is a version of red Chile peppers. I have pimento cheese in my fridge as we speak. I do the same though I do add a PINCH of garlic and onion powder

    I found your channel through the algorithim I guess. My southern (TN) sweet mom in law made her Pimento Cheese with cheddar cheese, the whole jar of pimentos, mayo and little sugar. I use a food processor to grate the cheese. 😊 I will have to try adding seasonings but will forego adding the cream cheese.

    We boys have pimento cheese in here in Indiana. I love it and I didn’t realize it was this easy to make but I will be making my own from now on because a jar of it we get at the grocery store is just a tiny little glass jar of some.

    I made some earlier today. I used 8 Oz pepper jack to 16 Oz sharp cheddar and I added a little Slap Yo’ Mama in it to give a little more zip.

    You are using way too much mayo!!!!! You should use 8oz of cream cheese and only about 1/3 cup mayo and 1 teaspoon wostetshire sauce.
