Creamy Dill Sauce Recipe - Super Easy! Annie's Kitchen

  • Hello and welcome back to another recipe!
    I made a really simple and creamy dill sauce recipe which is perfect to eat with tender, juicy salmon!
    It's also perfect on my next recipe so stay tuned for that! ;)
    Recipe: • Simple Salmon Tart - P...
    60g salted butter
    30g plain flour
    425ml whole milk (for a thicker sauce) 500ml if you prefer a less thick sauce
    pinch of nutmeg
    salt and pepper to taste
    small handful fresh dill

    I made this and then put it in mashed potatoes and added salt, pepper and garlic powder….DELICIOUS!!! It literally tastes like Christmas to me….like if Christmas had a taste, and I don’t know why lol ❤

    looks delightful.
    I have found using a whisk instead of a wooden spoon is much better when adding liquid to roux

    Thank You so much for this recipe. Love from India. Btw , can we use dry dill instead of fresh Dill, we don’t really get dill here. Or is there any other herb we can use ?

      You can definitely use dry dill instead! You could replace the dill with fresh parsley too 😊

      I also use dry dill, but I make sure to get some from a reputable company, of course, they're more expensive, but well worth it if you don't have fresh. Perfect video by the way!

    Thanks, I’m now cooking for 2 and my wife can’t or doesn’t want to remember quantities. So instead of buying a packet of white sauce mix I’d go back to cooking my own.
    I can remember white sauce but I needed to know the amount of herbs needed.
    I will have milk and bay leaf from poaching the Haddock, but does this need to be cold?

      I would recommend using the milk when it is cold as a safer option (it helps to prevent lumps!) If you're short on time, you could perhaps try it with warm milk and pass the sauce through a sieve to remove any lumps if it gets lumpy!

    Always remember hot roux + cold milk = no lumps every time.

      Yes! If you decide to freeze it, I would suggest adding the fresh dill once the sauce has defrosted, for that fresher flavour

    Can you use heavy whipping cream instead of milk?

      I wouldn't recommend it, unless you add a little dash of cream with the milk 😊

      I personally would say you can....hehe our work recipe is heavy whipping cream, grey poupon mustard, and dill

      Yes, the fresh dill would be better for this recipe, but dry dill should be fine too :)

    if i want to use this sauce more for pouring over fish for 2-3 people should i change the amounts and if so by how much?
    Im new to cooking and would love to try this recipe without wasting food.

      I think half of this amount should be enough, I make this amount of sauce for 6 people :)

    Is there a keto substitute for the flour like coconut or almond flour or anything? I doubt almond flour would work lol but is there anything similar that wouldn't turn out horrible?

      I've never made a keto roux before, perhaps try making a small batch with whey protein isolate? It may not thicken up the same, so perhaps use double cream instead of milk for a thicker sauce. I hope this helps!

    We call that gravy where I come from. Maybe "dill" gravy, but fat+flour+milk+salt+pepper = gravy.

      @@ChunsBuns11 jus if I don’t need much like steak, but gravy, after roasting beef skim off what fat you can. Plain flour in the roasting tin then let it cook on a low heat and scrape the detritus of the tin and add a little water to help then return the juices to the tin and if you have enough gravy and it’s thin enough tip it into a saucepan taste it then add w after or seasoning as necessary.
      It really needs a video if you’ve never seen it done before. Perhaps roast beef, and potatoes with Yorkshire pudding with sprouts or spring cabbage 😇

    HEY !!! ANNIE !!!!!!! You said Fish sause You Forgot lemon juice!!!.. Before Milk Add juice from 1 lemon 'let it for few seconds to start Boiling and then the other staff'.. And less Pepper!!! . Thank Me Later !!!!!!!

      I like to add lemon to the fish itself, adding it to the sauce risks curdling the milk when it's cooking 😊 I appreciate the feedback!

      @@ChunsBuns11 Add lemon zest or juice but let it boil a little Before milk or half and half... Don't be afraid the lumps !, To Put Juice in the Fish is another Taste ! (I do it too!!)... , Try It !! Please! , And See for your Self!!... But it's Ok... Your Taste Your Fish Your Video !!! And I must Say !!! VERY GOOD Recipe and Presentation!!!!! Good Job !!!

    Don't use flour or milk . Use heavy cream silly.
