Strawberry& Mint Lemonade

- 2 cups lemon juice about 6 to 8 large lemons
1 lb fresh strawberries cleaned and hulled
8 cups water divided
1 to 2 cups of lemon simple syrup(recipe below) or granulated sugar or maple syrup, agave or honey
Juice the lemons, and add to a large pitcher.
In a blender, add the strawberries and 2 cups of water.
Blend until pureed.
Strain strawberry mixture to remove pulp, add to the pitcher.
Add remaining 6 cups of water to the pitcher, then add the cooled sugar syrup.
Stir until well blended.
Serve over ice.
Garnish: with lemon slices, strawberry slice and a mint leaf
LEMON SIMPLE SYRUP:"
3 cups of water
1 to 2 cups of sugar
3 to 5 mint leaves(optional)
Heat the sugar&water, and mint, and the lemon halves you squeeze of it's juices in a large saucepan until it boils, and the sugar dissolves for 1 minute, then turn it down to a low simmer for 3 to 5 minutes. Then let it Cool.

I made this the other day made with Splenda simple syrup. I still have about less than a 1/2 cup of the syrup left. I'm gonna use it to sweeten something else. Didn't add the mint. But, OMG it was the most delicious thing I've had! I finished the whole picture in one night. I will definitely be making this again. Thanks again Sara 🙂

We're in Maine, so we're currently getting warmish days in the high 50's and low 60's. But we know those hot Summer days are on their way! lol. Also I am diabetic, so this recipe really appeals to us cause we will use the Splenda. This will be especially good when we grill and do BBQ. We'll have to do your grilled corn too. Yum.
