- Here are 4 amazing fall treats you can make from Dollar Tree inspired by more expensive brand items! Even when money is tight you don't have to sacrifice some of your favorite treats, here is how you can easily make them at home.
Cold Brew Concentrate (Dilute 1:1 with water):
4 ounces of ground coffee (approximately 1 & 1/2 cups)
32 ounces of cool filtered water (from your fridge)
Add coffee and water into a french press. Press down gently so all of the grounds are submerged but don't press down all of the way and let this steep at room temperature for 24 hours. The next day, press plunger all of the way and pour cold brew through a mesh strainer lined with a coffee filter to remove all residual grounds. Store in the fridge for up to a week.
Pumpkin Spice Syrup
1 can sweetened condensed milk
1/2 cup of brown sugar
1/2 cup of pumpkin puree
1 tablespoon pumpkin pie spice
1/2 cup of water
1 teaspoon of Vanilla extract
Into a saucepan, add all ingredients except vanilla.
Cook over medium heat until it begins to boil, then simmer for 10-15 minutes. At the end of cooking remove from heat and stir in vanilla extract if desired. Strain, let cool, then bottle and store in the fridge for up to 7 days.
Brown Sugar Vanilla Syrup
To a saucepan add 1 cup of brown sugar and 1 cup of water. Bring to a boil to dissolve sugar. Take off heat and stir in 1 tablespoon of vanilla extract. Bottle and store in the fridge for up to 2 weeks.
Pumpkin Cream Cold Brew:
To a cup add 2 tablespoons of brown sugar vanilla syrup, 1/2 a cup of cold brew concentrate, 1/2 a cup of water and top with ice. Leave about 1 inch at the top of the cup. Whip 4 tablespoons of well chilled evaporated milk (or heavy cream) with 2 tablespoons of pumpkin pie sauce for 30 to 45 seconds until frothy. Pour over the cold brew and finish with a sprinkle of pumpkin pie spice.
Pumpkin Cream Cheese Muffins
Muffins:
2 packets of banana nut muffin mix
1 cup of pumpkin puree
1/2 cup of oil
2 eggs
2 teaspoons of pumpkin pie spice
Cream Cheese Filling
8 ounces of cream cheese
1/4 cup of sugar
Splash of vanilla
1 egg
Mix all muffin ingredients together, divide between 12 lined muffin tins. Soften cream cheese to room temperature, cream with an electric mixer, mix in sugar and vanilla, and finally the egg. Add this into a bag and pipe into the center of each muffin. (My mixture was thin, so I had to pinch the end of the bag, press it down into the muffin, release and fill the muffin. Remove the bag and pinch to close before moving to the next muffin). Bake at 350 for 20 to 25 minutes.
Pumpkin Bread
1 box of vanilla cake mix
1 can of pumpkin puree
1/2 cup of oil
3 eggs
1 tablespoon pumpkin pie spice
Mix all ingredients together, pour into a parchment lined loaf pan and bake at 350 for 55 to 60 minutes. Remove and let cool completely before slicing.
Crumbl Pumpkin Roll Cookies
Pumpkin Spice Cookies:
2 bags of sugar cookie mix
6 tablespoons of margarine/butter
1/2 a cup of pumpkin puree
1 teaspoon pumpkin pie spice
1 egg
Strudel topping:
1 tablespoon margarine
1/4 cup of brown sugar
1 teaspoon pumpkin pie spice
Frosting Swirl:
1 8 ounce jar of cream cheese frosting
Add pumpkin puree to a plate, using paper towels press out as much moisture as you can from the pumpkin. Soften margarine to room temperature and cream with a mixer. Add in egg and dried pumpkin. Mix in sugar cookie mix and pumpkin pie spice. Cover and refrigerate for 2 hours.
Prepare strudel topping, mix 1 tablespoon of butter or margarine with 1/4 cup of brown sugar and 1 teaspoon of pumpkin pie spice.
Scoop out 8 evenly spaced cookies, top with some strudel topping, press down slightly. Bake at 350 for 14 minutes, let cool completely and finish with a swirl of cream cheese frosting. - Jak na to + styl

I made my sister a big mug full of coffee stuff last year for Christmas and I put a bag of Harry and David's in it along with some other Dollar Tree stuff and she loved it!! I like the coffee too!!

I’m so glad you said the cold brew was a CONCENTRATE. The first time I made it in a French press I drank the whole French press in one day without diluting it. I was so shaky 😆

hey there lady! next time - freeze the cream cheeze filling in a bowl till firm, scoop out a spoonfull then place in the BOTTOM of your muffin tin before pouring in the muffin batter.
I did think it would probably do better if I had chilled it to firm it up a bit, one to revisit later, it was still delicious!

It does get harder and harder ...having grown up in the Midwest with family that owned farms and lots of family and neighbors and friends who you knew for years created more community but times are different and people are more transient and that makes it much harder to pool resources and barter and trade to help each other the same way 💖

It’s a lot of work! For me the nearest Starbucks is 20 minutes away, so I rarely go unless I’m already in town, it’s much easier for me to just keep stuff on hand to make it at home anyways
My nearest Starbucks is also 20 minutes away. And my nearest Dollar Tree is 30 minutes away.
@@DollarTreeDinners Starbucks is really close to me as is DT, but I just can’t stomach paying six bucks for a coffee when I can buy a whole large creamer that will last me two weeks for about $2.60. I hate being practical.
@allyrooh3628 I don't buy Starbucks coffee anymore for a lot of different reasons. But price is one factor and a big one. I would rather make my own Frappuccino for a heck of lot cheaper than buy it.
Tried the pumpkin cream cheese muffins! Tweaked it a bit. I used a vanilla cake mix, 1 can pumpkin purée and 1 egg for the batter and followed your recipe for the cream cheese part using actual cream cheese. Absolute deliciousness 🤤 ordered a French press to try the coffee! Thank you for all the recipes! It’s given my husband and I a new love for cooking and baking recently! We’ve been watching your videos a lot and trying something new each week ❤

Next time use a piping tip to put cream cheese in the center of the muffin it will make it so much easier to fill next time

With the DT cream cheese blend, my impulse would be to add some flour to the mixture, and layering it between the batter, rather than trying to pipe it into the batter, might have given you more gooey interior cheesecake.♥ A drop of molasses would help supplement the sugar cookie mix to give it more of a brown-sugar flavour.
Waited until after dinner to watch this bc I know it would make me hungry again 😂. I'm not a big Starbucks fan (grew up enjoying Dunkin) but I really appreciate your effort in recreating their expensive drinks for others to enjoy at a more reasonable price.

Those all look great! For the cream cheese filling in the muffin you could add a bit of flour to the cream cheese mixture to give it a stiffer texture without affecting the flavor too much. That way it would stay more inside of the muffin instead of rising to the top.
Another suggestion would be to use a yellow, white or spice cake mix and a box of instant vanilla pudding instead of the banana muffin mix.
The pudding will give you more of a pound cake texture verse a cake texture.

For cream cheese filling I take the can of vanilla frosting, beat in 1 8oz block of soft cream cheese and add a little powdered sugar if it’s not thick enough. You can add it after it’s baked.
I make my cold brew in 2-quart glass jugs, about 8 to 12 ounces coffee to water about 2 inches below the rim. I wrap the coffee in 2 packs, each one holding half the coffee in a paper coffee filter sealed with a sanitized rubber band. I attach the filters to tablespoons, and use a small jar of pebbles to submerge them. This was stuff I had lying around. I let it sit on the counter with a lid for at least 12 hours, preferably 24 hours. It isn't so messy fishing the grounds out.
That is pretty smart. I don't ever have rubber bands, but I do have dental floss.
I am in Australia, no thanksgiving & we don't have pumpkin puree but gee I would love to try making all of these. You did an awesome job as always😊

Maybe it's just a Utah thing, but every fall we have Pumpkin Chocolate Chip Cookies in every store around here, and they are sooooo good! I'd just make it that way, using the chocolate chip cookie mix, and not bothering to sift out the chips. Give that a try sometime.

The great thing about baking mixes is that you almost can't mess them up by adding thj gs to them. I don't know what they put in them to stabilize them but it works!

It's usually always just me and my son so we don't do anything either. It's so hard to do traditional thanksgiving type dishes for just two people but I almost always make something pumpkin related. He usually asks for pumpkin bread but I think I'm going to try her muffins with the cream cheese. Those looked amazing.

For the pumpkin muffins, next time try premaking the cream cheese filling, chill it, then scoop out little balls and poke them in the batter. Or you could do a larger pumpkin loaf, and use the runny cream cheese to do a marble pattern.
I am definitely going to try that cold brew pumpkin coffee. That would be amazing to have on Thanksgiving morning. Those muffins! I think I have some pastry bags in a drawer somewhere and I think they have metal tips. I bet using a metal tip would make getting that cream cheese into the center easier. When I bake with pumpkin I roast/toast the pumpkin puree innthe oven for 15-20 minutes. It reduces rhe water content and makes the flavour richer.

On the muffins, try putting half of the batter in. Add the cream cheese filling and top with the remaining batter.
the gritty stuff in the pumpkin sauce can be added to milk and iced coffee and blended to make a mock pumpkin frap. it's actually bomb (i just tried it so i wanted to add it here)
