  • Easy Thai panang curry with pork recipe - super easy and delicious! It has just a few ingredients. It is a very popular thick curry popular in Central Thailand and tastes great served with Jasmin Rice. Please try it! Directions are below:
    INGREDIENTS 👇👇
    PANANG Pork Curry
    12 oz of pork (or you can use 1 lb) very thinly sliced the pork
    1 can of panang curry paste, I recommend Measri brand
    1 can of coconut milk, I recommend Chaokoh brand
    1/2 cup pea eggplant (if you can't find it is fine to skip)
    2 sweet mini pepper, sliced it very thinly (you can substitute with red bell pepper)
    6-7 leafs of kaffir lime leafs, sliced very thinly like noodles
    2 tbsp of palm sugar, finely chopped
    1 tbsp of white sugar
    1 tbsp of fish sauce, Use brand import from Vietnam with 3 Crabs on logo
    INSTRUCTION
    step 1: Turn stove to high heat, put wok or sauce pan over heat, and then pour a can of coconut milk in and stir until coconut milk gets thicker and coconut milk oil breaks down.
    Step 2: Once the coconut milk gets really thick and there is some coconut oil floating on the surface or on the rim of a pan then add the curry paste and mix it into the coconut milk, then reduce the heat to medium heat and keep stirring it until coconut oil separates away from the curry paste.
    step 3: Add protein (meat) in then stirring curry until it is cooked (approximately 5-10 minute depending on the type and cut of meat), once the meat is cooked then start adding the palm sugar, white sugar, and fish sauce.
    step 4: After all the ingredients are combined, then taste to determine whether you want to add some more fish sauce, palm/white sugar.
    step 5: Add eggplant, sliced sweet mini pepper, sliced kaffir lime leaves, stir together then allow to continue cooking for 1-2 minutes. Then it is done!
    step 6: Serve with hot Jasmin Rice which pairs perfectly with panang curry! really great choice,

    Well done. It looks delicious.
    So, why is this dish without garlic and onion? Or is just optional ?
    Should I cook it with or without ?

      Thank you so much for your compliment. For this type of curry we do not put either garlic or onion. Also in a curry paste has those type of stuff already. 😄

      @@sabaidee5587 it’s optional kha. However, since I have known how to cook this type of curry I never used garlic kha. If you make stir fried curry you might want to put fresh garlic kha. 😄
