Shrimp Panang Curry|Fast|Easy|Delicious

  • I just want to share a little background story about my recipe! I have traveled and lived in so many places around America. One of the places I used to live in is the beautiful island of Oahu in Hawaii. This was the first place I lived in America. Oahu, Hawaii is so diverse, and was the first place that I tried many different cultural dishes, including Thai dishes. Since then, I fell in love with Thai dishes and have been making Thai dishes in my kitchen for my family.
    For my recipe, I used pre-made panang curry paste which has the same amount of spices and components to homemade curry paste. You can find panang curry paste in most Asian grocery stores. The panang curry paste is so good that you can pair it with most meats and seafood.

    Ingredients:
    2 lbs shrimp tail ( cleaned, peeled and deveined )
    2 cans coconut milk
    4 tbsp panang curry paste ( MAE PLOY )
    4 large lime leaves
    2 tbsp coconut oil
    4 tsp sugar ( add more if needed, depending on your taste )
    1 small red bell pepper cut into strips
    1 small green bell pepper cut into strips
    1 medium carrot cut into strips
    2 tbsp minced garlic
    1 cup diced onion
    1 tsp salt

    I would add the shrimp after the veggies so they don't overcook:)

    You should probably Blend the curry and coconut milk in a little blender

    Love it when she says the shrimp are pretty much cooked lady those shrimp died twice.

    Good attempt, MomSie, but the shrimps are way over cooked. I would omit the onions and garlic, these ingredients are already in the paste. The paste should be cooked early on in the coconut milk or oil. Add the shrimps last indeed, they only need 5 minutes max. Fish sauce does wonders btw!
