Because you fell for the crema marketing. In the early days of espresso, people were suspicious of the crema, so it was heavily marketed to tout how it's a sign of good coffee. But this is just stupid. It's carbon dioxide and surfactants. It doesn't improve the flavor, it actually slightly degrades it. Stir it in or scoop it off for better espresso. Modern espresso is moving away from crema as more people are experimenting with lower pressures (6 bar) and coarser grinds for better tasting espresso.
Mainly here as wanted to ask say with kettle and instant coffee I know how and making a white coffee but for on these machines does it have a different name? And is it still just process and pour milk in or steam first
I can't for the life of me find a video of someone going into real depth about any of these steps, like how exactly do you pour the steamed milk to make the shapes?

i try to do mine but grind coffee what setting between medium to low in the middle or low or course can anyone give me advice because when i make my coffee i ground the coffee then level out with my prongs then level it with the leveler then tamp gently then puck then machine but then when it goes comes out all crazy and spirty all over the place i have a barista machine i dont know where i am going wrong am i putting to much coffee in got the course wrong tamping it to heavy or light i dont know can anyone help pleaseee.❤

Have you tried almond, oat or even coconut milk as they are dairy free. And coffee shops will usually have those. None of these milks will however froth as well as dairy as it contains more fat which makes the texture and flavor.
I’ve never used a rice milk that has successfully frothed up. I find it to be super watery - at least the brands I’ve tried. If you’re able to drink it, oat milk is probably the best dairy alternative for milk based coffees.
Chill your milk in the metal jug you steam it in. The colder the frothier and richer. Move the jug up and down to allow some bubbles but be careful not to blow it everywhere 😂😂

As someone who worked in an Italian restaurant/ coffee shop, we don’t even come close to the amount of steps he uses when we made espresso

Spray water on your beans before grinding so it is softer and easier for the machine to grind
