    Often called Cucumber Kimchi, but the proper name is OiSoBaGi/오이소박이 (phonetically pronounced "O-Yee-Soh-Bhak-Yee"). Oisobagi is a summer dish that is made to be eaten right away or fermented much less than the traditional Napa Cabbage Kimchi/BaeChu Kimchi/배추김치. The cucumbers are stuffed with spicy GoChuGaRu paste with garlic chives and more. It is a simple cucumber dish that is crunchy, spicy, and all the yummy goodness of fresh cucumbers.     I live in Barbados and I just discovered your channel. I became fascinated by Korean cooking through watching Korean films. I find the food beautiful to look at. The way vegetables are used and make them look so tasty. Living where I do, it is hard to get these ingredients.     Helen, do the cucumbers have to be cut the way you did it, in large chunks?? I've had it like that before, and the large chunks can be a little overwhelming in your mouth.

      Novum Devonshire👋 Thank you🙏 I would not peel the skin off. Doing so would make the cucumbers ‘melt’/make the interior of the cucumber soften too quickly. If u want to push fermentation, leave the cucumbers at room temperature for 12-24 hours.

      Hi 👋. English cucumbers would work, if u can’t get Kirby cucumbers. As for the timing of maximizing the healthy bacteria, I’m not a scientist to say when exactly in the fermentation process that would be. I would Google, “Zymology and vegetable fermentation” and read what the scientists say.

    How come the one that has been fermented sounds crunchy and mine is very soft almost soggy after the fist day? Do my cucumber have to be big? All I had was small snacking cucumbers. How long can I keep cucumbers in the fridge fermenting? Thanks for your videos. I appreciate all the work you do for us. Be blessed.

      Hi 👋 scrow62 🙏Thank You🙏 Let’s Hmm...if u don’t mind me asking. How long did u brine the cucumbers? Use coarse salt? How long did u let sit in room temperature after u made it? How small r the snacking cucumbers? Usually, u want the diameter of the cucumber to be at least 1” or slightly more/close to the width of Kirby cucumbers.
      Did u cut into T-Shape, not sliced?
      These Cucumber Kimchi will keep in the fridge for as long as u like, meaning it will be soft and tangy as it ferments longer. Some like them fresh-only and some like them very tangy and almost soft.

      @@ModernPepper Thank you! I appreciate your quick response. I think my cucumbers were way to small and kind of skinny.
      I cut them I let them sit in the brine for 2 hour, then rinsed them as you did, but they were very flimsy (soggy).
      I should have left those little ones maybe 1/2 an hour to an hour.
      I did cut into a T, but the were thin wedges, lol. Lesson learned DO NOT USE small sack size cucumbers from Costco, get the ones that are a little bigger than the snack size.

    I’ve seen recipes that use hot water and salt to first brine the cucumbers (instead of just salt). Would you recommend just salt brining instead?

    Just curious...why do you have a preference regarding the type of cucumber? From watching all these videos on kimchi, it seems like the fermentation action is driven by the flour/water mixture (which would basically turn into a sourdough bread starter if left in a jar by itself). Do the particular vegetables you put in the kimchi really matter or can you use any vegetables?

      Hi dreamregent! Great questions! I prefer the kirby cucumbers because it is firm and sweeter in taste than the others. BUT my first choice would be Korean (ChoSun) cucumbers for its refreshing and slightly salty taste. For fermenting vegetables, you just need salt. How kimchi is fermented is more around the temperature storage of the kimchi (starter temperature and how it is stored while in continues to ferment...slow and steady or fast). Some kimchi does not use any starch (i.e. flour or any starch), and some families make kimchi without any flour/starch. As for how the kimchi tastes, it all depends on all the ingredients used. So, yes, the particular vegetables and ingredients directly affect how the kimchi tastes. Some families make their kimchi very simple, on a tight budget.       Hi Teresa! You can cut them into individual spears. This just means it will ferment faster, which is fine as long as you are ready to consume them quickly.       Hi EA Bird. Do you mean Kirby cucumbers when you are referring to pickling cucumbers? If so, YES. Kirby or Korean cucumbers are best for making this recipe with. The video also includes other cucumber options.

      Hi Abu Lahab👋. Excellent question! For summer kimchi, like this Cucumber Kimchi (official name O-Yee-Soh-Bahk-Yee), starch gravy is not used. For many summer kimchi (FYI - there are 200+ varieties of kimchi), the starch gravy is not used (or just a small amount is used or steamed potato mixture is used, depending on the summer kimchi kind) because summer heat/warm temperature already speeds up the fermentation. Also, these summer kimchi are made to be consumed quickly, unlike the Napa cabbage & radish kimchi where it is made to ferment for months and longer.

      I agree. Even when I go to the written recipe, how MUCH salt brined shrimp? How MUCH fish sauce, etc? I really love this dish but not having the amounts would make it very difficult to make. 😔

    I am in love with my kimchi. I made it with available ingredients, came out lovely. But is super hot. I used local chilli flakes, mD I'd so hot.

      Hi 👋 Salma Soliman So happy to hear that u r in 💚 with how gorgeous ur kimchi turned out. Ok, if it is too spicy, let it ferment and the spiciness will subside/blend in with the kimchi juice. And even after a month of fermenting and it still tastes too spicy, add less the local chili flakes u r using, next time u make it. If u can’t get Korean red pepper flakes, I understand that u r doing best with what u got locally🤗. BUT pls do check out my Kimchi 101 written recipe which includes finding a local spice purveyor to find a good match to Korean red pepper flakes (with scientific species name for the Korean red pepper flakes). www.modernpepper.com/post/kimchi

      Hi Chris. Excellent question! Salt brining is the first step in the pickling process when making kimchi and it also kills off any external bacteria. Why rinse off the salted cucumber? If the excess salt is not rinsed off, the pickling process will be too salty and also make the cucumber release too much of its own liquid too quickly. We want to slowly ferment the cucumbers by exposing it to other ingredients we add, not overwhelm it with too much salt. Hope this helps.

      Hi Danielle Banks. The vegan ‘fish’ sauce is NOT made w fish. It is made w seaweed and other ingredients to mimic the taste of the fish sauce. As mentioned in the video, the vegan ‘fish’ sauce recipe is included in my Vegan Kimchi recipe.

      Hi 👋 Ama Bos I do mention that Korean cucumbers r excellent for making this cucumber dish in my video. Korean cucumbers r sometimes hard to get here in US, but Kirby cucumbers r also commonly used to make cucumber kimchi. I also mention that using Persian cucumbers is a third option, if u cannot get Korean or Kirby cucumbers.
