- In this episode of 'Price Points', Epicurious challenges chocolate expert Amy Guittard of Guittard Chocolate Company to guess which chocolate is more expensive. Guittard breaks down baking chips (aka chocolate chips), white chocolate, dark chocolate, and cocoa powder. For each type, the connoisseur looks at and taste tests each chocolate before guessing which chocolate costs more. Once the prices are revealed, Guittard explains why a specific chocolate costs more and dives into specifics on how each chocolate is prepared.

If you liked this video, you may also want to know that there are a number of steps to making chocolate! First, cocoa beans are picked from the tree. At this stage, the beans are white and gooey. The beans are fermented for 2 weeks and left to dry. Once dry, the beans have turned brown! The dried beans are roasted to create more flavor, and finally, made into chocolate products!

It comes down to the scarcity of the bean. The $550 bar is made with super rare heirloom beans. The $7 bar is probably still a good maker, but just a more available high quality bean.

Got into this series last Friday and watched it all through today and now I know how fortunate I was since I could differentiate by looks every single expensive food.
Couldn't find a bar that costs $550 but there is one that costs just south of $700 and could have been $550 back in 2018. The company is called To’ak. It costs so much because the cocoa beans are aged in former wine casks for over 4 years before being made. Secondly, the beans they use were fought to have been extinct before To’ak announced the type of cocoa beans they use. They are Nacional beans that are very high quality but have a very low yield and reproduction rate which drives the price up even further.
They bring out 100 bars per edition and always sell out the day they are ready for sale IIRC.
I'm not sure that $550 can cure your stress.. cause it vanishes your money just for a single chocolate bar and that's gonna make you crazy

USA min. wage is 7.25$, let us say the chocolate bar you were going to get is 5$. This is ~68% of your hourly pay. 800$/hr would be 544$ at 68%. 800x24 = 19,200$ a day X 365 = 7,008,000. So someone who makes 7M a year, a 550$ piece of chocolate would be the same as someone who makes 7.25/hr and gets a 5$ bar of chocolate.

If you appreciated this video, you may also want to know that Chocolate sometimes gets a bad rap because chocolate products can include a lot of added sugar. Sometimes, there’s even up to 50g of added sugar in one chocolate bar! For context, the World Health Organization recommends staying under 25 g (or 6 teaspoons) of added sugar per day!

It doesn't necessarily makes sense, but it impacts my perception of logic.
Just kidding. But it makes sense! It's not the end of the world to have tiny air bubbles showing through your still tasty and pleasantly textured chocolate, but there's a price point at which it's no longer acceptable unless it's truly something special otherwise (taste and texture wise).
Considering she didn't particularly care for it and based her decision on facts and logic rather than her feelings on the experience, we could say that it's probably expensive stuff but maybe not worth the price.
There's a comment around explaining how it was likely part of a particular box set with that price containing a collection of many interesting chocolates. If that's true then maybe the price point is acceptable.
Still, she didn't care much for it. And she's the expert, not me. I'm a chocolate beggar, she's chocolate royalty.

The point of the video is to educate people on the differences between expensive and inexpensive chocolate. The fact that she's very thorough in explaining what makes pricey chocolate pricey is worth more (pun intended) than what she thinks of its taste.

Yup, But I really argue about it. For the cheapest ones, In my home country, Indonesia (You recognized it in the blackboard) some manufacturers use soy lecithin, not only sugar. This is a really common ingredient in substituting the cocoa butter because it's affordable and easy to find, including even in dark chocolates............

The $550 one is misleading. It's an anniversary package where you buy a golden box full of 30-something very high quality chocolates. It's like buying a $200 collector's edition of a video game that has a massive figurine included and calling it the most expensive video game on the market.

I knew there had to be something up, Most other videos when they had an extremely high priced product, the expert could usually even identify the exact product -- As would be expected.
The fact that most people in any hobby can identify the top of the line products within that hobby, I thought it was weird that she kinda blew off the $550 before it was revealed.

I'd bet the cheap milk chocolate is Hershey's. She said it had a back of the throat flavor, and I've heard a lot of people say Hershey's tastes like vomit. That's because they add butyric acid, which has a vomit flavor. Don't ask me why.
I can understand Hershey wanting to giving their product a distinctive taste but why vomit flavor and not something more pleasant tasting like mint, cinnamon or licorice flavoring instead. I can barely finish a few Hershey pieces without wanting to wash my mouth

@@jeremnis Handmade doesn't mean "good quality" and perfect looking doesn't mean "bad". It all depends on context. For example if an industrial chocolate has airbubbles that's a bad sign that the process hasn't been refined (or alternatively, you're buying a pretentious brand that likes to appear like it's handmade...). Lots of high quality industrial chocolate is perfect looking (Lindt for just one example) and is also really good (for industrial chocolate !).
On the other hand, I think that a $550 chocolate bar is a perfect example of something incredibly pretentious and only for idiotic nouveau riche snobs since there's no way it's worth it, even with the very distorted sense of value that a billionaire has. Only way that could make sense (barely) is if this chocolate bar was produced on a special occasion and had more of a symbolic value, but we're leaving the "food" space in this case.

I'm an animator and I always take note to observe people's body language and facial expression.
And I gotta say, Amy has one of the most colorful facial expressions I've ever seen! She is just oozing with charisma with every word she speaks and the vibe she gives off makes people feel at ease.
Her body language is very bubbly and natural; always comfortable and relaxed. You can put her on mute and still smile watching her gesture while able to get a rough idea of what she is talking about; her body language really depicts her words. Normally, I don't comment on CZcams but after watching her talk, I just had to. Like a Disney princess come to life!

When I first watched this a year or so ago, I was very much a dark chocolate person and had a somewhat unfair perception of milk chocolate based ony experiences with mass market brands like Hershey's - I decided to pick up a bar of good milk chocolate bar from a local chocolatier (Theo's here in Seattle) and sure enough, the fresh milk flavor really comes out and pairs well with the chocolate flavor. I still think I'm more of a dark chocolate person but I'm thankful my eyes have been opened to the joys of a good milk chocolate now!
YES!! There are so many grat craft chocolate makers. What you are tasting in most grocery store chocolate is sugar and vanilla. Try to find a dark milk chocolate, that will blow your mind. And seattle is a great place for craft chocolate, lots of good makers near by and one of the worlds biggest craft chocoalte festivals!

We like it because its an expert talking about what they are experienceing, and why they are experts, then that explenation is backed up by the fact that they guess which one is more expensive
these taste tests are the opposite of blind tests, they do this so that the expert can spot the cheap one by appearance which means they don't have to rely on their taste and are almost always right.
When I was a kid, I would have thought this was a dream job! Amazing!
