      I mean, that’s the difference between using a recipe and cooking freehand. She could probably make most of the things in her cookbook freehand, with some variations and would still turn out fine, because she understands the fundamentals of the recipe, but when you’re doing a demo from a cookbook, it’s always good to follow the recipe as closely as possible.

      It is? I don’t get it. There’s no point in memorizing a recipe that you have written down in many places, including a published book. What’s relatable about that? If you’re trying to imply she’s forgetful or whatever, it’s really not the same.

      @@funkychilldude A lot of food people on youtube/tv would edit out that part so they look like they're doing it all from memory, that's all. Leaving it in contributes to a nice down to earth vibe.

      ​@@funkychilldude in my line of work I'll often find myself looking up things in the materials I've prepared, and while doing so sometimes I'll realize I had a few details wrong in my head - like she did with the oven temperature here (she assumed it was 350F because it usually is but for this particular recipe it was 400 something). So I guess it's a little about being forgetful but also about working with a lot of information and details that makes it smart to check the source material (even it's something you yourself prepared and know better than anyone). Which is why her behavior here is very relatable to me in particular.
      EDIT: To better address your reply to my comment; I never expected her to memorize the recipes. I think what she did here makes sense - both getting a few things wrong from memory and checking the reference material. On the other hand, I've seen comments from people in other videos of hers finding it strange that, upon checking a recipe, she noticed she had done something wrong/different, because she's written it herself so "how could she not know what it said" (paraphrasing here). So what's a given to you and me is not to everyone else necessarily. I still think it's relatable.

I like that Claire has her own thing going on on her own personal channel but that's something she brought over from Gourmet Makes - showing us the real process of making a recipe and the hiccups that happen along the way. That's another thing that makes her videos relatable - not to mention entertaining!

      @@youresoeffincool i am one of those that thinks any bread goes with chili lol but this is a pretty intense flavored cornbread so probably goes best with a more mild chili. if chili is intensely flavored then i’d reach for a more traditional kind of cornbread. i am no food expert though! just my preference/thoughts

    My favourite thing about Claire is that as soon as she's making something savoury her attitude goes "Oh, just do whatever with it; add or leave this ingredient, it's your choice". But if it's something sweet she will quite literally rip you apart if you haven't browned the butter.

      @@zeriyx the further you get from missouri/oklahoma, the more common it is to refer to them as the south. They're sort of at the intersection between the south and the midwest, but the census bureau puts Oklahoma and Missouri in the South and Missouri in the Midwest.

      @@lvs6775 yes it's in the book and it's so good, think similar to a strawberry shortcake but instead the cake is like a very fluffy cornbread! I definitely recommend you try it, the recipe wasn't difficult I'm still a novice home baker.

    Speaking as a born-and-raised Southerner, Southern cornbread does not need to be dry, sandy, and bland. It can be savory, cakey, or even a little spicy if flavored with green chilis. Cornbread can also be sweet when flavored with honey.
    A sweet treat that I grew up with was a slab of hot cornbread with a pat of butter and drizzle of honey on down served in a bowl with milk or buttermilk poured over it. It is simple and delightful.
    We also make fluffier and cakier cornbread that we eat with soups or simply as a bread dish on the side. It usually incorporates some baking soda or something to help make it rise and be a bit springier. My grandfather used bread, whether it was cornbread or a roll, as a utensil to both sop sauce and to help scoot things like field peas and rice onto his fork.
    What you made in this recipe would be delicious with potato salad, some whole-hog pork, slaw, and savory baked red beans.

    yellow cornmeal is a must have!! I'm from the South, love to see it, Claire. I've seen other cornbreads that have corn and jalapeños (we call it Mexican cornbread where I am from) and other things in them, so this is a welcome recipe!

    Some southern cornbread is sweet. When I lived outside of Savannah Georgia I got to try a lot of cornbread and one of my favorites was this one p,ace that smeared maple syrup on top and let it soak into the bread. Sooooo good!

    My mom's cornbread recipe is one she learned while living in Hawaii, and it's essentially pound cake with cornmeal. It's so good, and even though I grew up in Texas, I will never apologize for liking non traditional cornbreads.

    Claire, I love this idea of loaded cornbread. The definition of southern cornbread that you used is more of a white version. There have been articles written about the difference between white, crumbly, savory cornbread and yellow, moist, slightly sweet cornbread. They are both good and used in different food pairings. Also, we add in corn kernels, cheese, jalapeños, honey and other things into our cornbread in the south.

    Cornbread can be made however you enjoy it. It's just about acknowledging that it's not traditionally southern. I grew up on southern cornbread, but to be honest? I prefer cornbreads like yours. Sure, you can't have it in milk the next morning for breakfast, but it's just... so delicious on its own.

    This is Mexican cornbread! I’m from Louisiana and our regular “cornbread” is sweet enough to eat as a dessert I swear, it’s amazing-tender like a cake with NO added corn pieces bc those are icky. But my grandma makes Mexican cornbread that has corn and jalapeños and green onions in it and it’s a totally different experience.

    Southerner here, you’ve made a hybrid of what we would call Cracklin Cornbread with the bacon, and a Texas cornbread with the heat. The one thing we don’t do is add any sugar, and the fat in the skillet would be straight lard, probably from an empty coffee can. Otherwise looks pretty great. Give every slice a giant slab of butter and you’re in business. Looks delicious!

    Wowza. I just made this for dinner and it was absolutely spectacular. I used leftover corn on the cob that Id cooked on the grill a few nights ago . So so so good! We had it along a big pot of pinto beans and rice..topped with.lots of salsa verde and fresh cilantro. Make this cornbread!!!!! Thank you Claire!

    Just FYI, the recipe on this video leaves out the baking powder.

      I said the exact same thing 😂 but I love whole corn in my corn-baked-goods like corn fritters and hush puppies so I’ll probably make this recipe and just eliminate some of the ingredients (no jalapeños for me!)

    I tried making this and did not like the flavor and texture of it when eating it fresh (letting it cool first). I was initially pretty disappointed in it to be honest. But I kept it in my fridge and ate it over the next few days and the flavors tasted much better after letting it sit overnight! It definitely has a very strong cilantro flavor and is very savory/rich. I melted some cheese on top and it tasted great!

    as someone that grew up in the south - ignore those people that claim 'true cornbread' is only done one way. my adopted gramma, rest her, made an amazing sage, sausage, corn and jalepeno cornbread, (and she'd slip a little maple syrup or molasses into it as well) and that was always the first thing to disappear at the family gatherings. (also made for the makings of amaing dressing at thanksgiving!) and that end of the family... well.. let's just say 'they're as southern as they come'
    good memories.. she'd always make a special small pan of it for me if she knew I was coming to visit.
    so claire, your 'yankee' cornbread is perfectly legit.

    Here in the south we often make the distinction between cornbread meant for eating (like for breakfast or a snack w butter, jam, honey etc) and cornbread meant as a side for chili/soup. Eating cornbread can be sweeter, while side is usually not because that would taste weird with the dish. I have seen corn or jalapeno added to the side type as more of a stand alone side than a mixing side, depending on preference. Ratio of cornbread to flour varies, but should always have at least half corn. A couple tbsp sugar to bring out the sweetness of the corn. But the most important part is frying the batter in a cast iron skillet, so that part was definitely spot on! Cornbread not fried that way is just so so sad to me. I know my family's cornbread by heart. ❤
    This loaded type may not be traditional, but it looks the bomb as a stand alone side!

    Honest to God, it’s so delicious. I grew up on jiffy boxed corn bread mix. I’m NEVER buying that OR EATING that again. Her recipe for loaded corn bread is 20,000 times better than the dry jiffy cornbread mix. I’m making this again today.
