How to Make Bruschetta on the BBQ (An Italian Dinner)

  • Bruschetta is a traditional Italian appetizer made with grilled bread rubbed with garlic and topped with fresh tomatoes, basil, and olive oil. Here is a simple recipe for making bruschetta:
    Ingredients:
    1 loaf of crusty Italian bread or baguette
    2-3 ripe tomatoes, diced
    2-3 cloves of garlic, minced (I used garlic powder which was a mistake)
    Fresh basil leaves, chopped
    Red Onion, chopped
    Extra-virgin olive oil
    Salt and pepper to taste
    Instructions:
    Preheat your BBQ to 400°F. Cut the bread into 1/2-inch thick slices and place them on a baking sheet. Brush the slices with olive oil on both sides.
    Bake the bread slices in the oven for 5-7 minutes or until lightly toasted. Remove from the oven and let them cool.
    While the bread is toasting, mix the diced tomatoes, minced garlic, chopped basil, and 1-2 tablespoons of olive oil in a bowl. Season with salt and pepper to taste.
    Once the bread is cooled, rub a clove of garlic over each slice for extra flavor.
    Spoon the tomato mixture over the bread slices, making sure to distribute the toppings evenly.
    Drizzle a little more olive oil over the top of each slice and garnish with fresh basil leaves.
    Serve the bruschetta immediately while the bread is still warm and crispy.

    1. We've done this but we also used the kids' mozzarella cheese sticks on them as well. Super yummy.
