I prefer cooking this cut low and slow. 220° F for about 1.5 hours, until it's 130° in the thickest part.
125 is usually the best for beef I like it off just before 130 I find it gives it a little bit more juicyness

You cut the wrong direction, also lower temperature and longer time in the oven will make it god-like.

It’s stringy and chewy if you don’t cut it against the grain. Still tastes good though. 🤣
