- This is one of my favorite ways to cook a roast. Tri tip did beautifully with this technique. I forgot to note in the video that my thermometer needed replacement and the temp it registered was much higher than the actual temperature. I like my meat 130 (140 if my BFF is over). On this thermometer that reads 140 to 150. Sorry for the confusion.

I know this is an older video but it's new to me. I will adjust things based on my own cooking experience, but I will be trying this for our Christmas tri-tip roast tonight.
What brand of stop top oven was that? I need a small one that will hold a cast iron pan like the one you used. I liked the results you achieved on this recipe.

When you take the pan out of the oven and put it on the burner, are you turning the burner on or letting the head from heating up sear the roast?
hermit5ooo The burner is turned on. I always preheat my cast iron well to avoid warping them on the burner. Enjoy!
