Is it necessary to put a pan of hot water below the sponge cakes?
Not necessary but I find that it helps the cake not dry out

Hi what kind of butter you use
You can use unsalted butter sticks or salted (don’t add salt to the flour). I also like using the golden crème butter from the West Indian store
