Ingredients and Measurements:
For the jam: I made a large batch (you can cut this down if you don't need this much)
5 large pineapples crushed
1.5 cups brown sugar (you can add more depending on your tastes)
1 cinnamon stick
1/2 tsp. nutmeg
1/4 tsp. salt (OPTIONAL)
For the dough: (this will make about 20-25 pinetarts)
1 lb. flour (3 and 1/3 cups)
1/4 tsp. salt
4 oz. cold unsalted butter (1/2 cup or 1 stick)
4 oz. cold Crisco/shortening (1/2 cup)
ice water

My aunty does these, but when she makes the jam and it is thickens, she squeezes some freshly grated ginger juice for that little kick. It's delicious.

Made it tonight, it was perfect crust. Ty. Used milk to coat n it was still flaky crust. Only thing is I have to find a vegan shortening since the coconut oil substitute made the pine tart, coconut flavour

Any idea about the pineapple measurement if i use canned pineapple? Im thinking ill do two or three cans and drain the juice then boil it down since you said your batch made a lot? Also how long would the pineapple jam last if i make too much? (Im testing it out this weekend and if its good ill make it again for Christmas)

Any other sugar to use besides white or brown (something healthier?) Also, can I use another flour? Ex: chick pea flour or almond flour?
You’d have to mess around with it. With the dough being so crumbly already I imagine a gluten free flour may be harder to work with. For sugar you can use any sugar substitutes and I’m sure you can use honey too but you need to boil it longer to get rid of any water

You can brush with milk. Some people use water dyed yellow

You need to keep adding until the dough comes together. Sometimes the flour takes more or less.

That would be very hard to do. You can probably make 1/2 of this recipe but you’ll still end up with more than 5.
