Thanks for watching! Fish butchery is really an art mastered over time. the number one thing i find works is keeping the fish cool so it stays firm. Touching it less helps and chilling everythign along the way quickly helps also so it doesn't get mushy.

Debas are traditionally made with carbon steel which id assume his is as its a Japanese brand

Ive sen dozens of these videos on how to - the problem is I'm left-handed...
Just focus on the way the fish faces , ie belly towards or away from you and head facing towards or away from your knife hand . It's where most people get confused . Everything is the same no matter which hand is dominant , just a mirror image .
