  • Ingredients:
    40ml milk
    40ml vegetable oil
    40g all purpose flour
    8g instant coffee powder
    5 egg yolks (grade C)
    5 egg whites (grade C)
    50g sugar
    1/2 teaspoons cream of tartar
    200ml whipping cream
    30g sugar
    200ml mascarpone cheese
    Baking Pan Size :
    28cm x 28cm x 3cm
    Temperature & Baking Time :
    25 minutes - 30 minutes
    Top temp : 165°C / 329°F
    Bottom temp : 130°C / 266°F
    Instructions:
    1. Pour milk and vegetable oil in a bowl. Mix well
    2. Sift in instant coffee powder and all purpose flour then whisk evenly
    3. Separate 5 egg yolks into the mixture and 5 egg whites into another mixing bowl
    4. Whisk the egg yolks until the mixture becomes smooth
    5. Preheat oven for at least 10minutes
    6. Combine the sugar and a teaspoon cream of tartar into egg whites
    7. Beat the egg whites on high speed for 1 minute +/-
    8. Then slow it down with low speed for 30 seconds +/-
    9. Whip the egg whites until fluffy, shiny and reaches a soft peak
    10. Once it becomes white and fluffy, transfer half into the mixture
    11. Whisk gently then slowly fold it in with another half of the mixture
    12. Line the pan with baking paper with all four sides meeting in corners
    13. Cut a slit on each corner and fold in the corners
    14. Pour the mixture onto the baking pan and spread evenly
    15. Give the tray a few taps to release any trapped air bubbles
    16. Bake in the oven for 25-30 minutes
    17. Remove the cake and bang the tray on the counter to prevent shrinkage
    18. While waiting, let’s make a bowl of coffee using instant coffee powder
    19. Pour the whipping cream in a bowl then whisk and add in sugar later
    20. Combine the mascarpone cheese onto the bowl and whisk it for 2 minutes
    ASSEMBLE
    1. While the cake is slightly warm, peel off the parchment paper
    2. Transfer the cake to a large clean baking paper
    3. Spread the mascarpone mixture on the surface of the cake
    4. Quickly dip each ladyfinger into the coffee and place on the cake
    5. Roll the cake all the way, ending with the seam side facing down
    6. Place into the fridge to set for 6 hours or overnight
    7. Dust the top layer with cocoa powder for finishing
