Also which is better - "Searchable Image (Exact)" or "Editable text and Images" I could see both options doing OCR but whats the real difference

I'm not exactly sure what the difference is between the two methods. Know that they produce different results obviously. I like to ensure that there are editable texts and images because sometimes the OCR results are poor thus resulting in a bad tags panel

There are 2 major problems - After a document is OCR'd and "Correct Recognized Text" tool is used, It cant be reused to correct anything which was wrongly accepted!!! and 2nd whatever OCR tool doesnt recognize as text, I couldnt find a option to force Acrobat to recognize that too as text, say some part of the doc is hand written and that part couldnt be recognized for OCR then what to do.
Please comment on both points. how to redo an "Correct Recognized Text" tool and second how to force something to take as text

Yeah this is like the worst tool ever for handwriting. If you need a more professional OCR program, I highly suggest you check out abbyy finereader pro

If you have any expert comments on - "Correct Recognized Text" tool -> "It cant be reused to correct anything which was wrongly accepted" Once this tool is used it cant be done 2nd time. thats the problem
