I always felt kind of not great when I just tossed my leftover salad in the fridge, but the lettuce just marinated in the dressing while becoming a pleasantly soft/crunchy texture was sooooo addicting. I eat it all the time now! Finding out a major chef understands this makes me feel less alone in something so silly to many others.

Gastronomy like this is honestly so fascinating, it turns food into something more than simply eating and cooking. It turns food into art you can taste, smell, and feel. I would give anything to go to these restaurants and taste these amazingly innovative dishes.
It's my dream to go to one of these restaurants some day but I can see that in most of them, the whole menu is meat-based. I'm vegetarian, so I won't eat that. Do some 3 star Michelin restaurants have vegetarian menus?
Eleven Madison Park is a 3 Michelin star entirely plant based menu! I have a video on them :) also a lot of tasting menus nowadays have vegetarian options and some are plant-focused like Geranium (the current #1 restaurant in the world)

It's so weird seeing "$50" and "casual" in the same sentence. $50 is close to what I spend on food in a week, and I sometimes feel like I'm too liberal with how much I spend.
