    The food is one thing, beautiful, but their relationship...so precious. If I never make anything from her (I do, I'm making these right now) I enjoy watching her so much, What a delightful and gentle woman she is. I really admire her understated manner.

    I prefer my latkes with onions and sour cream, but Ina is always a delight! I’m so glad she stressed the importance of squeezing out the excess moisture. You wouldn’t believe how many people skip that step, and the latkes are then inedible.

      Yes, my husband loves them without Onions. He always saves a lil in the bowl for me to add the onions. So yummy!

    I had to make these after watching this. I did however make one change and one addition.
    First I grated up and added an onion. Secondly, i served them with sour cream.
    Delicious.

    My mom makes this, it's good with sour cream too. My mom's boyfriend is Polish. I might send her this video. It's a Polish dish, but some people in my choir are Jewish and they said it was also a Jewish traditional meal. My mom has a special potato grater, but I forget what it is called. We make 20 at a time, and my mom's boyfriend loves them sooooooo much.

    I love Ina. I especially love how wonderful the relationship is after so many years between her and Jeffery. Not to mention, these potatoes are wonderfully delicious 😋💕. I just saw all the comments. Why no onions. Well for starters- it’s for breakfast and with the applesauce they just don’t taste right. Second, you have to sauté the onions beforehand or they don’t cook with the potatoes. You get a crunchy kind of onion taste. And third, not everyone wants onions all the time. I like mine with and without. Geezs, picky picky ppl

    This might sound silly but I made these and they're the most potato-y thing I've ever tasted! I used ghee, which is clarified butter, and a little olive oil.

    I heard cinnamon and onion are not compatible, so if anyone uses onions in the latke batter, cinnamon applesauce is an unacceptable variety.
    Anyway, also acceptable with latkes depends on weight concerns:
    A. Sour cream (if not concerned)
    B. Cottage cheese (if so)
    C. Plain yogurt (again, if so).
    I got those tips from HowCast.

    I like latkes with a dollop of sour cream topped with a 1/4 tsp of caviar - a la russe! the saltiness from the beluga is a nice complement to the potatoes.

    I grew up calling these potato cakes. Fried them in oil until nice and crunchy. I love them extra crunchy. Only ever had them with tomato sauce, ketchup to some. Have put grated sweet potato in them also.

    I put onions in mine and sometimes I'll put a slice of cheese between 2 and melt in the oven for just a couple of min then serve with applesauce...delicious!!

    Collect liquid drained off potatoes in a bowl. Let sit for 5 minutes. Pour liquid on top into a jar and use to make bread. White substance in bottom of bowl is potato starch which should be added back to potatoes. What about shredding onions too?

    Thank you for the recipe! I fried them with decent EVOO instead of clarified butter, and they came out great. They are so rich that they scarcely need apple sauce or sour cream to garnish. I will definitely make them again!

    This is pretty close to my grandmothers recipe so I look forward to giving it a spin. As the host mentions , eastern European Jewish. One medium onion for every four medium potatoes is also absolutely essential in my opinion.However, she used bacon fat instead of clarified butter. I’ve tried to make them so many times and unfortunately always come away with a soggy center. Maybe the bacon fat is a mistake?… of course my mother never really had a recipe, so I can’t tap into her knowledge for this dish even if she was cogent.

      Matthew Kepha I don't cook them before. If you shred them ( I use the food processor for the onions because I am lazy.) they blend right in.

    To the potatoes I also add one small grated onion and even squeeze little garlic into it. Then I fry on any fat I have at home: butter, oil (or both together) or lard. Potato pancakes are delicious with sour cream or apple sauce. You eat them for lunch or dinner. Never heard of eating them for breakfast. Is it... American way?
