It's a Polish dish, but some people in my choir are Jewish and they said it was also a Jewish traditional meal. My mom has a special potato grater, but I forget what it is called. We make 20 at a time, and my mom's boyfriend loves them sooooooo much.

I heard cinnamon and onion are not compatible, so if anyone uses onions in the latke batter, cinnamon applesauce is an unacceptable variety. Anyway, also acceptable with latkes depends on weight concerns: A. Sour cream (if not concerned) B. Cottage cheese (if so) C. Plain yogurt (again, if so). I got those tips from HowCast.
I like latkes with a dollop of sour cream topped with a 1/4 tsp of caviar - a la russe! the saltiness from the beluga is a nice complement to the potatoes.
I grew up calling these potato cakes. Fried them in oil until nice and crunchy. I love them extra crunchy. Only ever had them with tomato sauce, ketchup to some. Have put grated sweet potato in them also.

Collect liquid drained off potatoes in a bowl. Let sit for 5 minutes. Pour liquid on top into a jar and use to make bread. White substance in bottom of bowl is potato starch which should be added back to potatoes. What about shredding onions too?
Thank you for the recipe! I fried them with decent EVOO instead of clarified butter, and they came out great. They are so rich that they scarcely need apple sauce or sour cream to garnish. I will definitely make them again!

Maybe the bacon fat is a mistake?… of course my mother never really had a recipe, so I can’t tap into her knowledge for this dish even if she was cogent.
