    1/4 cup vegetable oil
    1/8 tsp salt

    I learned to make this a slightly different way: Heat the oil. The drop it over the scallions, which are in an earthenware bowl. I love it over pan fried tofu. Yum!

    Thanks for all your delicious recipes. I always wanted to learn to make all these delicious vietnamese dishes. For the scallion oil, you mentioned we can put it in a jar for future use. How long does it last in fridge to be used?

    In vietnam I would see this crunchy brown bread in this garnish. Can you tell me what it is? Maybe its the skin of the pork?

    You say cook 3-4 minutes until the water has evaporated. What water? Are you talking about water left from rinsing because I only put oil in the pan.

      Yes, definitely. I use olive oil because I love the taste. Most people like canola oil because it's milder.

    What is the salt for? Usually I just put the scallions and oil into the microwave without salt. How does the taste change this way? (Using the microwave and taking out the salt)
