If you are lazy and want some quick single time scallion oil, going with a pan bottom full of oil and just put one single scallion thinly cut in, and low temp cook it until the deep green part gets all shrinky, you'll still get a decent oil that can be used on some noodles or even ramen. This is my go to fast and enjoyable meal when i'm at work.

Chef Wang Gang deserves to be recognised as the person who has brought authentic Chinese Cuisine to the greater world of food lovers. This may seem insignificant but to understand and love another culture's food is a huge step to respecting and loving that culture. Go Chef, you are helping the world come together with food by sharing your knowledge. It sets an example to always teach those who don't know and to feed those who have no food. now! go eat noodles!

I was slighty mislead by the title Scallion oil. This is most likely a delicious scallion and spice infused oil. Which I never have tasted (I think). I actually thought he was going to extract Oil from scallions. Which is Possible Scallions have 0.2% of fat.
Like using 10kg of scallions to make about 20g of oil. Which in Retrospect is just rediculous.
Soy beans are about 18% fat which is why this makes so much more sense
