  • All the recipes from today's video are typed out in full below.
    Here is the cookbook: amzn.to/3J4qtYr
    Chicken Roll-ups
2 large boneless, skinless chicken breasts
1 can cream of chicken soup
    6 ounces chicken broth
    6 ounces milk
    1 T. flour
    salt and pepper to taste
1 can (or more) crescent rolls
    6 ounces shredded cheddar cheese
Cook chicken. I used my electric pressure cooker. Shred chicken and save broth. Whisk together soup, broth, milk, flour, salt, and pepper. Unroll crescent dough and separate into triangles. Place a little cheese over dough and a good heaping of chicken. Roll up and place in greased 9x13 casserole dish. Pour gravy in between and over all roll-ups. Bake at 375 degrees for 25 or more minutes. Mine were in for about 40 minutes. Sprinkle on a little bit of cheese (not much) and bake an additional 5 minutes. Allow to set up for at least 5 minutes before serving. These were so, so good!!
Amish Macaroni Salad (This is a half recipe, just the way I made it.)
    6 ounces cooked elbow macaroni
2 hard-boiled eggs (I'd like more next time.)
1\2 red sweet pepper (I used yellow)
    1\2 sweet onion
    2 stalks celery
    1 cup Miracle Whip dressing
    1 T. dill pickle relish
    1 1\2 T. yellow mustard
    1 t. vinegar
    2 T. sugar
    scant 1\2 tsp. celery seed
Chop veggies very small. Slice eggs. Rinse pasta with cold water. Mix all dressing ingredients well. Add in all ingredients and mix well. Refrigerate at least 1 hour before serving. This was also very good!
    Coconut Pecan Cake
    1 box white cake mix
    1 1\4 c. water
    4 eggs
    1\2 c. oil
    1 cup shredded coconut
    1 cup diced pecans
Mix first 4 ingredients well. Add coconut and pecans. Pour into greased and floured or parchment lined circle cake pan. Bake for 20-35 minutes depending on size of cake pan. Cool and remove to cooling rack to completely cool before frosting.
Melt 2 T. butter in skillet; add 2 cups coconut (1 cup would be plenty) and toast for 5 minutes or more. Watch carefully and stir often. Allow coconut to cool completely. To make icing: cream together 2 T. softened butter and 8 ounces of softened cream cheese. Add 1\2 tsp. vanilla, 3 1\2 c. powdered sugar, and 2 tsp. milk (I used a little more milk). Cream well and stir in coconut. Ice cake, and sprinkle with 1 c. chopped pecans and any extra coconut you might have. Chill before serving. This was rich and yummy.

I make a lot of Amish recipes, and a lot of Amish recipes are things my family already makes. I made the roll ups the first time over forty years ago...my recipe had chopped mushrooms, it was for a baby shower, and she delivered the night before. That is why the year is imprinted in my mind🙋

Made the Amish macaroni salad 3 weeks ago for the first time it was a big hit here, I doubled it, it made a ton, but was not much left. I am a cookbook lover also, have 36 from book sales have not even touched yet, because I keep taking new ones out of the library also. My newest favorite recipe is a very time consuming pizza crust, but I am now spoiled because it is pure perfection, and the only way I want it, but have to plan ahead for this one, but well worth the wait, for me you need the perfect crust, and this is it.

I used to get cookbooks from the library all the time too. A helpful hint when making recipes from borrowed books it to cover the book with plastic wrap to keep from accidently making a mess on it. Amish cookbooks have some amazing recipes in them.
Peter was so sweet to wanting to make cinnamon rolls for Maria and her friend. He's quite the cook and such a caring young man.
    As always...Hi Joe!

We always have pecans on hand. They definitely are expensive. I've found that the best price for us is at one of the membership clubs (BJs, Costco, etc.). We buy them in big bags and freeze them. As we use them by expiration date, I put them in quart mason jars with the non-canning plastic screw on lids. They last very well that way!

Jennifer, I see that bananas are 29 cents/ pound at Kwik Trip through September 5th. Maybe you can add that to your shopping if you want bananas.
I think I would like to try the macaroni salad. Sounded delicious. I too grew up on miracle whip. Had to have a thick layer on the bread for sandwiches! Now I prefer Hellman’s mayo. I also never liked onions as a child but now love them. I guess tastes change as we age!

I'm so glad I saw this video! Me and my daughter have been wanting to try these chicken roll ups for several weeks now but I've been a little hesitant because I'm so afraid they'll be all soggy, and I cannot stand soggy dough lol. But maybe I'll do what you did and just cook them longer.
As far as new recipes, me and my daughter (who neither one of us are really fish eaters) we found on Pinterest a recipe for lemon garlic salmon and it's absolutely incredibly delicious!! We've had it twice in three weeks lol. And it's very quick to make too (less than 20 minutes). Goes great with green beans and fried potatoes 😁. We're going to be trying some maple glazed salmon tomorrow for her birthday so hopefully we like that just as much.

Joe just cracks me up! I love his spirit. All of your children are amazing people. I am making the chicken roll ups (a couple tweeks since I forgot to get cheese 🙂). I sauteed some celery (with leaves) and onion in a little butter and mixed it in with the chicken. Other than that, it stayed the same. Hubs said house smells wonderful and we can't wait to try it. I love your videos and I will make that cake when my folks come down to visit. Have an abundantly blessed day! 🌻🌼

When my sister was having chemo I often stayed with to help with meals, etc. I made a recipe similar to chicken roll-ups. not cooked in gravy. I managed to cover them com[lety with the rolls.rolled them in melted butter and crushed seuffing mix. I baked them and we put a light chicken gravy when serving. My sister liked them . We would wrap them individually a[nd freezenthem and she would eat them after mw . when I coudn't be there. She has passed away now and I miss her so.
