Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 8 - 24. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

Regarding the pistachio pudding salad try this, a 16 oz cool whip, package of pistachio pudding, a can of fruit cocktail and mini marshmallows. Defrost cool whip add dry pudding mix together add fruit cocktail juice and all then stir in mini marshmallows as desired probably about 1/2 bag then refrigerate for a few hours. Marshmallows and pudding will absorb the fruit juice! It’s almost a dessert

Next time I want to make pizza I am going to try those pinwheels, they look so good and easy. Wanted to let you know my eldest son has moved back home and I didn't realize how much that boy can eat but I am really happy to have him home with me again even if he is 37 years old. He is and always will be my baby boy.

Looks hearty and delicious. There's nothing like Country Style Meals of the Week which are Easy & Budget Friendly for busy nights!! . One of my best recipes was handed down by my grandfather who was part of a traveling band of clowns which toured the country in the 1930s and 40s. Not only did he fully participate as a performer (juggling and spraying seltzer mostly) but he was also in charge of the Clown Chuckwagon, and over the years, came up with a nice selection of mostly campfire stews (or "or stewge" as Gramps used to call them),, soups and casseroles. One of my favorites, casseroles, which I still prepare frequently, consists of baked beans and wieners (for the KETO portion of the meal), macaroni and cheese. and a couple handfuls of those big orange circus peanuts - a sweet yet savory bake-up that's a hit with everyone who tries it. Gramps had one clown name for performing with his fellow troupers at carnivals, civic events, etc., throughout the central Midwest ""Antsy Pants" - but around the campfire at breakfast or suppertime, when most of these talented vagabond buffoons had removed their make-up and hung their giant shoes in their campers, (but oddly enough not all of them) Gramps was affectionately known among the boys as "Yummo." He told me how it wasn't unusual for farmers to donate a hen or two and maybe a couple of dozen eggs, in return for a brief barnyard slapstick performance by a couple of the boys for the farmer, his family and his hired hands.. He also told me as soon as he got back to camp with the chickens, the alcoholic Geek who traveled with them would inevitably beg permission to bite the heads of the pullets when Gramps was ready to get those birds cooking. Seemed that this particular Geek actually not only savored the taste of the live chickens he was required to eat (which were usually provided by the promoter of the event at which the troupe was performing) - but craved more when "off=the-clock" Talk about a Carnivore diet!! Wow!!! Reportedly, he was known to comment that "live chicken pairs well with a pint of Carstairs White Seal Blended." By the way, Grandma also traveled with Gramps. She was the seamstress - making a good number of the clown suits from her own design and repairing all them when required. So of course Gram and Gran rolled along from town- to -town with a big foot pump operated sewing machine in their trailer, - in addition to all the pots, pants, cutlery, stirrers, etc. My Dad was born in a campground in Posey County, Indiana, delivered by a local midwife and plopped into a casserole baking dish as soon as Gramps cut the umbilical cord with his second best onion chopping knife. As for me, I married young and did well for myself in doing so. My wife is the daughter of an oiutdoor parking lot magnate in a major city in Ohio. I was dowried with three downtown lots. I've had a comfortable life pretty much doing whatever I want all day while other people collect money on my behalf while sitting down in booths, watching TV, reading (or even snoozing between customers arriving and honking the horns to wake 'em up). Consequently, for awhile, I was able to open a couple of storefront business which specialized in selling "clown suits for the whole family," including custom made if somebody wanted them - and even clown suits for the family pets. The seamstresses I hired used Gram's patterns, of course. . The stores were called "Hem and Ha!" - and with every sale, I usually threw in a copy of one of Gramps' recipes for a clown casseroles, "silly stew," "buffoon bread, "Punchinello Porridge,," or what have you. Of course, they all pair well with seltzer water. Thank you A Country Life for allowing me to share. Bon apetit!😁

@@tammyr2966 Thank you so much for your kind words of praise. As a matter of fact, a lot of the history of the travels of Gramps 'and his fellow vagabond buffoons was reportedly written in a series of diaries over the years by one of the members of the troupe who, like Gramps, had one stage name for performing (""Krispo," I think it was,), but back at camp because of his penchant for writing, was affectionately known by his fellow stooges as "William Slapspeare."
Sadly, Grandpa had no idea whatever became of Krispo or the diaries after the group disbanded when a few of them attempted to hold up a bank in Upper Peninsula Michigan in costume and make-up_ around 1947, were caught within the hour, tried and sentenced to prison for a spell. Grampa went on to serve in Korea as an Army cook and was awarded a Purple Heart for injuries he suffered during a kitchen grease fire (which actually was his fault). When he was discharged, he hung his clown shoes on the wall of his den and never donned the grease paint again.. He worked as a short order cook at various diners in the 50s., while Grams continued to sew and raise my Dad and my aunts and uncles, sometimes working part time as a seamstress. He eventually worked his way through the Howard Johnson's system and retired as a Regional Manager,. I guess the title of the book could be titled "From Yummo to Hojos: A Life Well Spent Combining Food and Fun."

Re: the pistachio pudding fruit salad and things I wouldn't make again--when I was a kid, Jello decided it would be a great thing to put out a series of vegetable flavored jellos. My mom bought a package of celery flavored jello and mixed in canned peas, boiled chicken bits, mayonnaise, onion, and I think a couple other vegetables. It was truly awful. More than 50 years later, my brothers and I still talk about it! 🤣

As your resident Greek viewer I am very proud of how you properly pronounced gyro. Most people say jy-ro. Yee-ro is correct in how you said it. Authentic gyro meat is lamb but most commercial stores and fast food places use ground beef formed around a spit and cut into slices.

Hi Jennifer, a question for your next Q & A: How did you and Warren choose the names for each of your children?

That sauce you made up looks exactly like Chick-Fil-A sauce too.

Our iceburg lettuce has been horrible and expensive. So I had 1/4 head of cabbage leftover and made coleslaw from your kfc recipe and served on fried fish sandwiches. I don't find non=meat meals on fridays during Lent a sacrament or sacrafice ... maybe just a reminder. Do you have a recipe for hot cross buns? Marcy

We eat a dressing on our taco salads. It’s one of those people love it or they don’t things. We can buy it local but I also have made it from scratch when necessary. I have eaten at the restaurant my entire life and sadly they closed last year.
    Pancho's Green Dressing
This is a copycat recipe for Pancho's Green Dressing. Pancho's was at one time one of the only mexican restaurants in the Memphis metro area. They are famous for this dressing.
    INGREDIENTS
    1/2 cup prepared mustard
    3/4 cup sugar
    1/2 salad oil
    1/3 cup white vinegar
    1 teaspoon oregano
    4 green onions, chopped
    DIRECTIONS
Combine all ingredients with blender or hand blender. I let it sit a little while to let the flavors meld. Serve on salad, guacamole, tacos, or whatever else you might like.

Do you use the dressing straight on the taco salads or do you mix it with something? I LOVE Western dressing too :)

Hi Jennifer. Is Warren’s popcorn ball recipe in the new cookbook? I have your first one and I didn’t see it. If it’s not in the 2nd cookbook, would you mind showing us again how he makes them? Thank you!

It's in the 2nd cookbook, but it's so easy. It's just like making rice krispie treats, but with popcorn.
