1/4 cup (50g) powdered erythritol
1/2 teaspoon (1g) salt
5 tablespoons (71g) unsalted melted butter
•LEMON CURD•
2 large eggs
1/3 cup (65g) powdered erythritol
3 tablespoons (45mL)fresh lemon juice
2 teaspoon grated lemon zest
2 1/2 tablespoons (36g) unsalted butter, cut into pieces
•GARNISH•
12 fresh raspberries
powdered erythritol for springkling
MACROS:

Such a refreshing tasting dessert! Just the perfect treat after a heavy dinner. I love the fragrant crust and the lemony curd. Will probably reduce the sweetener a little for the curd and add a splash of vanilla extract to it to add some flavour to the lemon the next time. Thank you for yet another awesome recipe! Do you think I could use a mix of coconut flour with the almond flour? If so, what would you suggest for the amounts to use?

Hi Diana! My lemon curd did not crystallize but it was quite thick when refrigerated. ❤️
@@ketoserts mine too, quite quite thick. I don't know what happened because I used powdered eritritol.
Can I use just an almond flour?
Ruby Francisco hi Ruby! Almons meal is typically made from raw (unpeeled) almonds, almond flour is made from blanched (peeled) almonds. Compared to almond meal, almond flour has a finer texture and lighter color. So if you have almond flour it means you have the blanched one. 💕 Hope it helps☺️
