You won’t believe how simple and easy these elegant little pastries are to make!💕
INGREDIENTS
3 large egg yolks
⅓ cup (65g) powdered erythritol
¼ teaspoon (1g) salt
1 cup (240mL) heavy whipping cream
3 tablespoons (45g) unsalted butter
1 ½ teaspoons (6mL) vanilla extract
¼ teaspoon (1g) xanthan gum
1 ½ cups (150g) blanched almond flour
⅓ cup (40g) coconut flour
1 ½ teaspoons (6g) baking powder
1 ½ teaspoons (6g) xanthan gum
1 ½ cups (375mL) water
½ cup (120g) unsalted butter
½ teaspoon (2g) salt
½ teaspoon (2mL) vanilla extract
3 large eggs at room temperature
Bake at 375°F (190°C) in 25-30 minutes
Yields 12 servings (3 pieces per serving)

FIBER: 3.5g
FAT: 27.9g

Ok so I just made this today! I’m speechless...😶 it’s so f*ck*n delicious! Sorry for my language but gosh! The pastry cream together with the cream puffs is perfection! I just enjoy watching the passion you show while you are preparing the masterpiece. I hope in the future their will be a dessert deliciousness cookbook. I have been on the Ketogenic diet for a year and seven months and have missed some of these delicious treats when I stroll by a dessert area in my local gourmet grocery but you have brought life back into my indulgence. they came out perfect ly..... I tried couple of other recipes they didnt come out well. I made lots of mini creampuffs.. Im on keto not my family couldnt save these from them.. 😂😂 they used cream and nutella in

I made these today but I think I need to make the pudding a little sweeter and thicker. The taste wasn’t what I was hoping for but I still do have a sweet tooth so that is probably why it tasted eggy and fell short of my expectation. However, it could be that I just need to adapt to a taste of less sweetness. I’ve been on Keto/low carb off and on. This is my third go around and I’m hoping not to fall off the wagon again. This time I’m more reluctant to go back to my unhealthy eating habits after my mom passed away from Cancer. Hoping to make healthier choices and stick with it for the long haul. Thank you for sharing this recipe. I loved my mothers pudding creampuffs. 😌
