Colombian buñuelos Navideños are quite different from any buñuelos I'd seen before. These buñuelos are more akin to Brazilian pan de queso than they are to the flat, sweet buñuelos of Mexico. A Colombian cheese called queso costeño is used in Colombia. Lacking that, use Mexican queso cotija, and lacking that you could try it with some dry feta cheese. When making the dough, grate the cheese as finely as possible; it should be like fine bread crumbs to get the right look and texture for the final product. The dough will be smooth and fairly soft and should easily roll into balls without sticking to your hands. Adjust the amount of milk if necessary to get a consistency like that shown in the video.

Ecuador has a similar version of these! Same dough, but baked instead of deep fried. They're bready and chewy on the outside but doughy and cheesy and delicious on the inside. Awesome!
I lived in Colombia for 2and a half years near Bogota, I used to get them hot from the local Bakery and put a little honey on them. It really brings out the flavor, another wonderful thing is pan de yucca ( pan de bono) . The hot chocolate is great too.
Aweee you did an awesome job with the buñuelos... we do enjoy them at christmas with natilla which is also made out of corn starch, panela, cloves, shredded coconut and cinnamon stick. Yummy but its made all year round and you could get them in Colombian bakery. They are delicious especially for breakfast with hot chocolate. But wow yours came out all nice and round. Great job. You should make Mexican Buñuelos! They are so good! They are the same thing except in discs and coated with sugar/cinnamon.

Hilah Cooking We colombians also have pan de queso and pan de bono which has less cheese and more tapiopca (yuca), and pan de yuca (all tapioca and no cheese)

They look perfect! at home we usually just buy a box that has all the dry ingredients but now I see that they're not that hard to make from scratch haha In Colombia we also make rather large buñuelos, about the size of tennis ball, but the small ones are better in my opinion! :D PS: I miss your project rant videos!

Awesome buñuelos! Next time try them with honey, their savory flavor mixes really well with sweets, hence the natilla. If you want to try them with chocolate try finding Corona or Nestle's Abuelita brand hot chocolate. Keep posting!

The Brazilian "equivalent" is actually called "pão de queijo" (Portuguese). "Pan de queso" is in Spanish. Anyway, yes the base ingredients are somewhat similar because they both use tapioca flour and cheese. Anyway, great job on this series!
You should use cojita on corn. Make Mexican corn which is butter and chili powder (maybe some cayenne for more of a kick :)) and top cojita cheese on top and some lime. So good.

wow. Buñuelos in Mexico are totally different. It's a Christmas dessert too but it is sweet and made with lots of sugar... I like the colombian versión altough i loathe Cotija cheese. anyway

How did you get such perfect buñuelos?! tell me this was not your first time round.
For the people trying this recipe, make sure you don't make the buñuelos too tight and keep and eye on them from a safe distance, if they are too tight, you can get some hot oil splashes.
