How I make Italian meatballs (in tomato sauce) | Banting-friendly
Italian Meatballs
Ingredients:
1 cup (lightly packed) of diced white sandwich bread,
1 small onion grated,
400g ground beef,
100g ground pork
1 egg,
1/4 cup fresh parsley, finely chopped,
2 garlic cloves crushed,
1/4 cup parmesan, freshly grated (optional),
3/4 teaspoon salt,
1/4 teaspoon black pepper
Sauce ingredients:
2 garlic cloves, crushed
2-3 tablespoons olive or coconut oil,
3/4 cup onion, finely chopped,
3 teaspoons Italian herb mix (parsley, basil, oregano, thyme) or use Six Gun BBQ spice
1 small, grated red pepper,
1 teaspoon red pepper flakes,
700g passata (tomato puree) or blended/grated tomatoes,
1/2 water,
1 teaspoon salt
To serve: Pasta of choice, parmesan cheese, parsley.
Note: You can substitute the ground beef and ground pork with just 500g ground beef.
