  • This is a Indo - Persian dish famous in a well known restaurant Peter Cat in Kolkata, India
    Chelow kebab is the national dish of Iran, which is generally served with saffron basmati rice and accompanied with a grilled tomato. In olden days putting a raw egg yolk on top of the rice, but I am making veg chelo kabab so I can't use egg. Basically it a non vegetarian dish, but it can be made with paneer and vegetables.
    Ingredients-
    For seekh kabab,
    boiled potatoes -4
    mix chopped veggies - 1 cup
    chopped onion - 1
    chopped ginger and garlic - 1 teaspoon
    roasted gram flour - 2 tbsp
    salt - 1/2 tsp
    red chilli powder - 1/2 teaspoon
    pepper powder - 1/4 tsp
    For paneer tikka-
    1 cup curd thick
    ½ tsp turmeric / haldi
    1 tsp kashmiri red chilli powder / lal mirch powder
    ½ tsp coriander powder / daniya powder
    ½ tsp garam masala
    ½ tsp kasuri methi / dry fenugreek leaves, crushed
    1 tsp chaat masala
    1 tbsp ginger - garlic paste
    2 tbsp besan / gram flour, dry roasted
    salt to taste
    3 tsp oil
    VEGETABLES:
    1 onions, petals
    ..1 capsicum, green, cubed
    8 cubes of paneer
    Stuffed potatoes and tomatoes-
    raw potatoes - 1
    tomatoes - 1
    grated paneer - 1/2 cup
    chopped chillies and ginger - 1/2 teaspoon
    salt - 1/2 teaspoon
    pepper powder - 1/4 teaspoon
    Ghee Rice -
    basmati rice - 1 cup
    water - 2 cup
    salt - 1/2 teaspoon
    lemon - 1/2
    ghee - 4 tablespoon
