I make cuccidati every year. Our filling is just a little bit different, apricot preserves and a little honey instead of sugar. I learned hundreds of cuccidatis ago to put the filling in a pastry bag and pipe a long row of filling. I probably make as many as you so I thought you might like to try it. I know how much work is involved 😅
I’ve been using a pastry knife and with a chilled filling it’s been going quick. I like the idea of the pastry bag though. I think I’m sailing past thirty pounds of just Fig cookies this year, so that’s something to consider.
