Clara's Holiday Special!
Cucidati Fig Cookies Part I
Recipe:
Cucidati Cookies (Sicilian Cookies by Clara)
FILLING
Boil 2 cups of water and add 1/2 cups sugar. Let cook.
3/4 cups shelled hazel nuts
1/2 cups shelled almonds
1/2 cups shelled walnuts
1/2 cups shelled pecans
Toast all nuts on cookie sheet separately (different nuts take different times to toast).
Grind together with nuts:
1/2 lb. diced candied fruit
1/4 lb. dark raisins
1/4 lb. light raisins
1/4 lb. dates (pitted)
1 orange with rind
1 dried tangerine with rind
2 lbs. figs or (2 packages or atleast 14 oz. apiece)
Mix well all the ground ingredients.
Add 1/2 or 3/4 of the cooled sugar water to make a nice soft mixture (be careful not to make it too soft).
Save the rest of the sugar water mixture.
Add 1/2 cup whiskey to ground ingredients.
Mix well and let stand overnight. Keep in a fridge or cool place.
You may need to add the sugar-water the next day.
DOUGH
10 cups flour
1 lb lard
1 1/2 cups sugar
1 cup cold milk
2 heaping table spoons baking powder
1 table spoon vanilla
12 eggs
Work flour and lard like you would pie crust.
Melt sugar in milk.
Beat egg and add vanilla.
When flour and lard are mixed well, add baking powder, then add the other ingredients and mix until you have a nice liable dough.
Let stand at least one hour, or this can be made the day before. Cover with a clean dish towel and put in the fridge or a cool place.
Roll dough.
Fill with filling (you can use a pastry bag). Cut and bake on ungreased cookie sheet at 350 until golden brown.
If you like icing, mix milk, powdered sugar and a teaspoon of vanilla (preferably white vanilla). Brush on cookies and sprinkle with little colored candies.

-Eggs
-Powdered Sugar
-White Vanilla
-Little colored candies for topping
-Filbert nuts (or Hazel nuts)
-Almonds
-Walnuts
-Pecans
-Candied fruit
-Dark raisins
-Light raisins
-Dates
-1 Orange
-1 Tangerine rind
-2 packages of figs or at least 14oz. apiece
-Whiskey

Whenever I miss my grandmother, I watch a few of Clara's videos. Such a lovely lady. Gentle and soft-spoken just like my grandmother was. I miss her, but she's always in my memories.

I just love seeing all the old stove, tools and cookware in Clara's kitchen. Most of it 1960s-70s. Nothing fancy, just what everyone really had before expensive "gourmet kitchenware!" She was such a doll. I miss my grandmothers.

I have a home made potato masher that my mother gave to me. It was given to her by an elderly neighbor when I was 5 years old. The lady told my mother her husband made it, and then it was 50 years old. I will soon be 68. So, you can see how old it is now. It is one of my favorite kitchen tools. I have old bowls given to me by other relatives that I use all the time. I love watching Clara use hers. I also have my mother's meat grinder, and dads butter churns that I used to make fresh butter from the cream from dads cows. I did that in high school. So many fond memories using old things. Oh the joy reaped from Clara's videos!

My mom i s african-american and from Louisiana and she LOVES these cookies. There is a famous Italian ice cream shop/bakery in New Orleans that makes these. She grew up on these so I made them for her one Christmas. She loved them.
Marie, my family is from the Houma area. While watching this I was searching my memories if my Cajun aunts ever made anything like these Italian style Christmas cookies. I couldn't recall, but I'm adding these to my Christmas cookie arsenal this year.
What can you use beside lard?

I think the cutest part of the video was Clara's great-grandson putting the sprinkles on the cookies and then saying, 'I love cookies.' Too cute!

I always return to Claras videos for my holiday cooking. Even though she is gone she lives forever in my heart.
I come back to Clara not just for the recipes my mom learned and cooked from my grammy, (almost same as Claras), but because she is so adorable, kind, and presents the inner beauty that so many people of today are lacking.
When I need some peace in my life (which is constantly lol), I come and watch your videos and they put me at ease. I wish you were still around. ❤

Yikes I've never seen a cookie recipe that required so many ingredients, I can see why she only made them once a year.
I think the fact that you can get everyone around the table to crack the nuts and make the filling up and then make the dough is what makes this recipe so special. Everyone can get together during the holidays and make them while chatting and sipping coffee or tea. I plan on making them this year with my Mom and Aunts. But I love to cook and bake so it's something that I would really enjoy.

It is like my Grandma would say “You young ones have to learn as much as you can from us oldies, we are like a book that has to be returned to the big Library in the sky one day”. Listen and learn from your grandparents, parents, older family cause it is true - we all have a return dates - once these family recipes, stories are told, keep them safe until they have to be passed on to the next generation. YES!!!! You have to use the ravioli cutting wheel & cut them on a diagonal! and of course the icing & spinkles are the most fun part especially as kids. The only thing we did differently was add just a drop or two of food coloring so our icing was beautiful pastel colors; blue, pink, yellow & green. Looked more like Easter colors but we didn't care. :)
I just started watching Clara's videos was in tears because she reminded so much of my great grandma and the family baking and cooking during the holidays. Thank you so much to whoever did these videos I watch at least one a day because she is so sweet and her voice makes me feel like I'm a kid again with my own granny. Isn't it, though? You can just feel the warmth, smell the strong coffee, and cook using all the old tools (well, except for the food processor!). Time slows down and there is no hurry, no stress.
All grandmas are beautiful and Clara is no exception. I wish I could have filmed my grandma making all of her homemade pastas and gravy. I keep her memory alive by making everything that she did from her cheese to pasta, and from her soups to cookies. Everybody enjoy your grandmas, they are precious!

This is one of my favorite Clara videos, not because of the recipe but because it shows her favorite thing: family. The girls calling her Nana, the great grandson wanting to help her. As the years pass and that little boy grows, he can watch this and see how much his great grandmother loved him. I miss my Nana every day. I miss helping her can the garden veggies, make pasta from scratch and anything else she needed. Family dinners were everything and they still are. These videos remind me of my Nana so much. Thank you for sharing your Nana with the world.

I am so glad to come here, I just discovered Clara a few days ago. I love hearing her stories and the food reminds me of when I lived on a farm in rural Oregon, my mom would can as well and we had our own garden as well as of course corn and squash and mint and beans and eggplant and peppers and all sorts of things. We had chickens and so we always had eggs. I know Clara has been gone for some time now but these videos can keep her alive, it must be so nice for the family to be able to come here and see her and share in the memories of her legacy--Thank you so much for posting and keeping her memory alive for ALL OF US.
