Dinuguan is also a delicacy in Greece. The Spartan meal of melas zomos, or black soup, was made of boiled pigs' blood, pork, and vinegar. It is probable that the source of the name fritada for the Guam dish came from a dish of the same name in Monterrey, Mexico where it refers to a stew made with the innards and blood of a young lamb.

This dish was brought to Hawaii over half a century ago by Filipinos contracted to work on sugar plantations . You can even find it every day at Japanese and Chinese lunch shops and has been very popular amongst Hawaii's melting pot of nationalities for generations. It's also common to see locals have it for breakfast served with a fried egg on top.

4:21 The 'unexplainable' thing she's referring to is actually umami. Blood has a _lot_ of glutamic acid (or glutamate), which when cooked is one of the reasons why there's that tastiness that's often associated with umami.
Edit: The best dinuguan I've ever had _definitely_ has to be the one I had in Ilocos (one of the northernmost provinces). It was *very* thick and meaty, vinegary, had a lot of garlic and chili, and was packed with salty _chicharong bulaklak_ -- which is deep-fried connective tissue you'd find in the abdominal cavity. Exceptionally good, especially with beer. Shaved off maybe a year or two off my life with all that cholesterol. Still worth it though.

@@Jimn-wu yea I remember I don't eat this dish in my childhood days because the way my cousins describes it and besides they're INC and I'm catholic. But when I went to college and there's this karenderya who also offered dinuguan. That's the time I loved the dish. I ate it almost everyday there and that's the best dinuguan for me. Now I'm 33, still the best dinuguan variant I can say. Hope I can visit them again someday & hope they're still open for business. Good old days

Very good that they all ate it with rice (probably because they were all nervous about the blood). I would also recommend having people eat the Filipino way - with a spoon and fork. (So much easier to eat the meat and rice together with a spoon!)

For me it's a choice between the Ilocano version and the Metro Suburbs version (which is a more metro version of Tagalog Dinuguan). I remember the Ilocano version which is spicier and almost dry, with the grease mixing and adhering to the blood gravy and meat. It's also light brown colored. The Metro Suburbs version is something like the one featured in the video albeit with some added garnishings not usually associated with the dish or the Tagalog version. Normally they'd use the bigger long green chilli usually used in Sinigang. Some folks from Bicol would even add "gata" or coconut milk, an ingredient prevalent in Indonesian and Thai cuisine. Since ASEAN nationalities share the basic ingredients and taste in their culinary repertoire, it does surprise me that "Pork Stew in Pork Blood" is unique to the Philippines, I mean I haven't even heard of a similar dish from Northern and Southern India which has influenced many cultures in SEA.

I guessed huge population of Indians are either not allowed to eat pork or being discouraged to eat pork. When I had a business trip in India, particularly in New Delhi, I saw several times on the roads, tall & slim pigs scavenging on the pile of garbages like stray cats & dogs. I asked then our Indian driver why is that. He said their government is allowing that to discourage the population to eat pork. And, there are a lot of Muslims in India as well despite it is a majority of Hindus... The same thing in other ASEAN countries... mostly are majority Muslim or Hindus...

I beg to disagree about ASEAN nations being mostly Muslim. There are only 3 nations so far that are majority Muslim populations: Indonesia, Brunei, West Malaysia, the rest of ASEAN are big on pork dishes and pork eating. I don't have stats to support this statement, but it's common ASEAN knowledge that only the 3 major countries I mentioned are majority Muslim population, yet they do not necessarily ban pork eating outright as their populations, except perhaps only Brunei, are hugely mixed with Chinese, Buddhists and Catholics and Christians and Hindus.

@@tuberobotto I agree.. Only 3 countries in ASEAN are Muslim-majority... But I guessed, a huge population of Muslim & Hindus comprises the ASEAN population being Indonesia having the most number in the muslim world... It is just a wild guess! 😅

Actually, it doesn't only exist in the Philippines. Cooking with blood has a long heritage in Europe especially in France, and certainly most countries in Europe have their own version of Blood Stew. Blood sausage or black pudding is basically pig’s blood and fat (and often onions), encased in a length of intestine, and is thought to date to ancient Greece. Our very own Dinuguan is one my British husband favourite Pinoy dish.

I think what the guy meant, was the recipe it self. You can't find it else where, given that other European and Asian countries use blood in their cuisines, like blood sausage. 😅
