Same. My mom's version of Caldereta is the best. we call it "Wasabi" or "Wasabe" (Walang masabe) since you cannot say anything bad about it. I have a clue on the hidden ingredient but never got it exactly. It tastes like a spicy Kare Kare with thicker sauce than Caldereta.
The vibe of that place is almost same like a on a cruise ship when the service is open, the galley the staff it must be busy on that joint all the time

If you want it super spicy use a spicy green long chili and use the Labuyo chili for the red one, your dish will be fire but delicious, great cooking Kabayan. You should cook them Bulalo or Kaldereta.
I usually double cook my Bicol Express adding chili flakes and more chopped garlic. It reduces the coconut sauce to become a coating, the coconut oil comes out more.
