Salmon with Lemon Butter and Rice, by Erin Foster and Justin Coit

    Salmon Ingredients:
    - 4 6-oz skinless salmon fillets (about 1" thick)
    - Salt and freshly ground black pepper
    - 2 tsp grapeseed oil
    - 2 garlic cloves, minced
    - 1/4 cup low-sodium chicken broth
    - 2 Tbsp fresh lemon juice
    - 3 Tbsp unsalted butter
    - 1/2 tsp honey
    - 2 Tbsp fresh parsley, minced
    Rice Ingredients:
    - 1 cup jasmine rice
    - Chopped scallions to taste
    - Toasted sesame oil to taste
    - Sesame seeds to taste
    - Salt to taste
    Instructions:
    1. Cook the rice per the package instructions.
    2. Remove salmon fillets from refrigerator and allow to rest at room temperature 10 minutes.
    3. To prepare garlic lemon butter sauce, melt 1 tsp butter in a saucepan over medium heat.
    4. Add in garlic and saute until lightly golden brown (about 1 - 2 minutes). Pour in chicken broth and lemon juice.
    5. Let the sauce simmer until it reduces by half (to about 3 Tbsp), approx. 3 minutes. Stir in butter and honey and whisk until combined and set sauce aside.
    6. Season both sides of salmon with salt and pepper.
    7. Heat grapeseed oil in a non-stick skillet over medium-high heat.
    8. Add salmon and cook about 4 minutes on the first side until golden brown on bottom then flip and cook salmon on opposite side until salmon has cooked through, about 2 - 3 minutes longer. Optional to flip and cook sides of salmon as well.
    9. To serve, pour butter sauce over salmon filets and sprinkle with parsley.
    10. To finish the rice, add all of the rice ingredients to the rice to taste.

    I make rice weekly and use a rice cooker but there’s something SO CHIC about that cute little pot. I want one!

      I think it would be great to make those ‘pot rice’ dishes I see on all the Korean channels I watch. They use cast iron woks with a lid. Now I want one in sage to match my braiser and grill pan!

    For the love of everything French! "Le" is NOT pronounced "LAH" under any circumstances. It's "le" as in "look" or "cook" as pronounced in English. How do they get free stuff pronouncing the name of the company wrong?
    Overcooked.

    The absolutely BEST salmon I have ever eaten was when I had an electric oven that had two broiler units so that you had that intense heat coming from both over and under the cooking dish. I preheated it, and put in the salmon, it only took a few minutes but when I took it out and tasted, with maybe only a little lemon butter, salt and pepper, it was absolutely fantastic, a little crust on the outside but the inside was so moist and flavorful. Unfortunately, I no longer have that oven.

      Suzanne Taylor one measure rice, two of boiling water. Lid on 7 min, off heat, stir and lid on for another 7 min. Perfectly cooked rice

    Thank you for two things on the rice. Rinsing off the rice first and the first finger knuckle of water for the amount of water. Two thumbs up (because I only have two thumbs). Also that "rice" pot can be used for Irish Steel cut oats and soups.

      I am German ... it drives me nuts when Iam in the LC store and the employees holler loudly to every customer that comes in “ welcome to LA creuset” I am like it’s NOT LA!!! This is just like when the Americans say Adidas wrong, BMW or Volkswagen ... I could go on! whey cant they say Brandnames the right way??? Because they don’t want to

      I was so confused because she pronounced it correctly and he was making her say it the wrong way lol. My french professors gave me such a hard time because of how I used to say Le because I would say it like the cameraman lol

      These pots are worth every penny and some. We have had ours for 10+ years and do not see them following apart anytime soon. They finally replaced the silver covering on some of the handles which is great as that flaked off. They caught it and fixed it quickly and now you can get those pots at a discounted price - still worth it.

    The Cajun girl in me cringed when she rinsed the rice 😐 We do not do that in Louisiana. I grew up watching my mawmaw who only spoke French (Cajun dialect) and she never rinsed that rice nor did I ever think to ask. I have no idea what it would even taste like if the rice were to be rinsed? That pot is on its way to me 😃 I’ve been using the white Le Creuset’s 2 1/4 quart with the plastic handle and that fake silver crap that flakes off 😩 for 10 years now for my rice. The replacement saucepan does not have the hole which is a must for stovetop rice. I cannot believe I’m just discovering this cast iron pot in 2022! Holy moly I’m so excited 👯‍♀️👩‍🍳 By the way your guidance on how to cook rice properly was spot on man 👊🏼 Good to see someone out there instructing how to the right way; you made this gal proud 👏🏼👏🏼👏🏼👏🏼

      Rinsing the rice is really standard practice (at least in asian cultures), it helps the rice fluff up better and not be so overly starchy and gummy/sticky.

    This is funny.
    Proper way: The height of the rice from bottom of cookware, you mark with your finger, mark it with your thumb, then put your finger on top of the raw rice and make sure the water level reached the mark you did on your forefinger with ur thumb. It’s 1:1 (1cup water + 1 cup rice). Use your finger if you don’t have measuring cup.

    Hi. The recipe looks great Salmon cooked beautifully, along with rice n sauce. Erin, please stop fiddling with your hair in the kitchen n videoing. Just wear you r beautiful wedding rings but wash well around them, less chance of losing them down sink when putting on or pulling off n having to call a plumber ( big added cost). Yep, use a grinder of salt or pinch n let go up high for more surface area coverage unless doing a rub. Peace to you and yours

    Words in French are assigned a gender. Creuset is male…so you must say, le …….so wrong that I couldn’t watch the video.
