      Yeah, except that I f the angle of a knife’s blade is 22 degrees for example, what that actually means is that EACH SIDE is only HALF of that number, 11 degrees in this example. 22 degrees per side might be ok for an ax, but it’s a little extreme for an ordinary knife just sayin’

    I taught myself how to use a stone. I have an interesting technique.
    When you are at the correct angle the blade sounds the quietest as you go over the stone.
    The blade is sharp when it no longer makes any (or almost any) noise as you run it over the stone.
    I use an oil stone and I believe a water or dry stone would sound louder. Keep that in mind.

  • @bnjmnNC
    @bnjmnNC Před 6 lety +2

    this is a great video and thanks for sharing. My main question is once you establish the angle with the paper, how do you guarantee you keep that angle across the entire stroke? Especially with a drop point or even more complex geometry of different blades. If this angle is so important (which I understand it is), then the geometric tolerance is so tight, that there is no way to insure you can get it exact by hand. We're talking a 7 degree tolerance over a distance of and 1/8 of an inch or less. Parts that exact are manufactured for aircraft and such and cut on $1 million machines. It seems to be a "feel" thing, which is fine. But I don't understand why a specific angle is called for in this method when you can't measure your accuracy. I'm not talking about the video poster, I talking in general. A human hand is not that steady. The method I see here is take a piece of paper to get a starting angle and then just guess. Then do it to other side of the blade. I get it, my post will probably get a lot of negative comments. But the point and question I have is, how is this accurate at all?

    • @armyofshea7941
      @armyofshea7941 Před 4 lety +3

      You bring up some valid points, and I believe that for sake of a short video, he did not cover. I have to disagree with your assertion that humans are inferior to $1M machines when it comes to precision and feel. The human fingertip can distinguish 13 nanometer waves on a “flat” surface (reference Swedish study from 2013). Not cm or mm, but nano scale waves. So we have the receptors in all of us to be insanely precise. The question then becomes, how do we use this precision? Practice. Lots and lots of practice. You can absolutely hold a dead on angle through your entire sharpening stroke if you build the muscle memory. The learning curve is steep (meaning the first few attempts will be rough), but after a few hours of practice you will be as good as a machine. After 100 hours you will beat just about any machine made. Hope this helps. If you are a Star Wars fan: “Do, or do not... there is no try.”

      andrewandthebee123 it could be that the steel that makes your blade is tougher than the stone. Try getting a coarser stone

    • @jasonharvote4093

      andrewandthebee123 im guessing rougher stone like this guy in video said depending on material you may need tougher stone.

      @RByrne Před 6 lety +2

      Is it maybe a ceramic blade? I have one and even a diamond plate wont do it. Could be very tough steel also. Some are very wear resistant, which usually means they dont sharpen easily.

    • @saltyseascott
      @saltyseascott Před 7 lety +2

      Look at the edge of the blade and see which side is rounded and which side is flat. the edge I am talking about takes the shape of an upside V. I use Smith Diamond stone kit, because some of the things in it is a jig which if careful you can hold a fixed position on the edge. My Dad was very good at sharpening knives, but I gotta tell ya I am horrible. I loaned a guy my # 110 Buck and he exclaimed, this thing is almost dull. I confessed I never knew what to do when I sharpen any instrument. The Smith Kit helped me to some extent. Take care Sunny!

      Let it rest on a finger nail. If it sticks with ease, it's sharp enough. Less risk of cutting yourself than doing that or trying to shave with it. More accurate too because you can check each spot of the edge.

    A carpenter I worked with was a master at sharpening. He told me that when a certain Asian knife is made, they've folded and hammered something like 1,000 times. They know the blade is sharpened to its best edge when they sight the blade along its length and see a barely perceptible void, like the thinnest possible black line. He said it's essentially a molecule of separation between the layers that made the blade...... can't get sharper than that.
    I'm ever amazed at how quickly PAPER can DULL a blade...... I think it's all about a malleability index? Like the difference in effort between sharpening regular steel blade vs stainless steel, the latter having the higher index and taking longer to sharpen, but holds its edge longer.
    Good show, man....... appreciate the angle gauge! My ex-honey used to scare me, oblivious to how dull her knives were as she chopped and sliced in terrible lighting...... I thought it's probably best she's fine with the blades she has, but what a world of difference a decent edge can make..... prep for cooking becomes a pleasure rather than a schlep :) I've long been curious as to how well the ceramic "V" shaped sharpener works with the 8"+ long vertical rods when you're only using about 1" of the whole height.
