Chicken Lemper : Indonesian snack made of glutinous rice filled with seasoned shredded chicken

  • Lemper Ayam is Indonesia snack made of steamed glutinous rice with meat or other stuffing and wrapped in a bananas leaf. It is also most popular Indonesian savory, normally can be found around traditional market, bakery shop and some café in Indonesia.
    The reason I select Lemper Ayam is because most of my family and friends are loving it and they often request me to make because I'm using premium ingredients and they addicted to it.
    Lemper Ayam
    Ingredients for Glutinous Rice:
    - 500 gram glutinous rice.
    - 300 ml coconut milk.
    - 2 pcs Bay Leaves.
    - 4 pcs Lime Leaves
    - 2 pcs Lemongrass take the white part and smashed it.
    - 2 pcs Pandan Leaves.
    - 1 tsp salt.
    - 1 tsp chicken seasoning.
    Method:
    1. Soak glutinous rice for 1 hour, strain it and set aside.
    2. Pre heat steamer until boiled then put glutinous rice inside the steamer, steam it for 25 minutes.
    3. In a sauce pan: pour coconut milk, salt, sugar, chicken seasoning, bay leaf, lemongrass, lime leaves, pandan leaves, stir them until well combined, bring to boil and set aside.
    4. Move glutinous rice to mixing bowl, pour coconut milk mixture and mix into glutinous rice until the glutinous rice evenly absorb coconut milk.
    5. Heat glutinous rice mixture for 20 minutes to 30 minutes or cook until soft.
    6. Take out bay leaves, lime leaves, lemongrass and pandan leaves out, set aside.
    Ingredients for fillings:
    - 500 gram chicken breast.
    - 10 lime leaves.
    - 2 Bay leaves.
    - 25 gram garlic, roughly chopped.
    - 48 gram shallots, roughly chopped.
    - 25 gram candlenuts, roughly chopped.
    - 4 lemon grass, smashed.
    - 2 tbsp Coriander powder.
    - 2 tbsp cumin powder.
    - 35 gram kampfeiria galanga.
    - 350 ml coconut milk.
    - as needed salt, sugar, pepper.
    Method:
    1. Steamed chicken breast around 15 minutes or until cooked through then shredded it, set aside.
    2. In a food processor making seasoning smooth: blend garlic, shallot, candle nut, kampfeiria galanga.
    3. Sauté seasoning smooth until fragrance then pour Coriander powder, cumin powder, lime leaves, bayleaves, lemongrass, mix it well then pour shredded chicken mix well then pour coconut milk, stir it for a while oftenly and put pepper, salt and sugar, mix well cook until the coconut milk absorb well into a chicken, set aside.
    4. Take out the tray 20 Cm x 20 Cm cover with transparent plastic, divide glutinous rice into 2 part (glutinous rice - shredded chicken - glutinous rice).
    5. Cut into 24 pcs and wrap it with banana leaves.
    6. Baked it until the banana leaves burn side by side then take it out and ready to eat when it is not too hot.

    Thank you for this recipe Bern trying to find it for a while....but I rather it roasted over fire....I know this since I was a child living in Suriname...
