Better than OAT Pancakes!

Batter mix
Buckwheat dry 1/2 cup
1 Medjool date or 1tsp of honey
Flax or chia seed 2 tbsp
1/2 tsp baking soda or 1tsp baking powder
1/2 cup water
1 Banana
Apple cider vinegar
Blueberry protein sauce
- 1/2 cup frozen blueberries
- Scoop of protein powder
- 1 tbsp peanut butter
- 1/2 cup of water
Method
- Soak buckwheat for 4 hrs or overnight, rinse well
- Blend all ingredients except banana
- Pour batter into a bowl and slice a banana in
- Add 1 tbsp of apple cider vinegar
And stir
- Pan med/high heat and cook pancakes to the desired size using coconut oil or EVO
- Add blueberries, peanut butter, and protein to the blender
- Serve
