If you are doing some more EU4 mods, maybe give Imperialism Reinvigorated a try... after they finally update it. Lots of new provinces, nations and mechanics including age bound colonisation

the Boers (transvaal or oranje) are a pretty fun playthrough. Takes some time to get to secondary power and start colonising, but with enough poems anything's possible.
Transvaal can be an acid trip. Once I got the perfect Transvaal campaign, conquered Oranje & Zulu, took the Cape Colony from Brits with a lucky war (they got themselves into a war with America America and someone else) and got to #15 SP. Started colonizing Indonesia and then, out of nowhere, Russia declared war on me for Aceh. So I spent nearly a decade as the Boers fighting a guerilla war against Russia in Indonesia and South Africa. Managed to get a white peace lol.

I'm playing a game as "Argentina" now (once you annex Uruguay and Paraguay you become the United Provinces). It's a lot of fun expanding in the Southern Hemisphere.

It pops up in some games and the cool thing about it is the fact that it's one province has the lowest colonization number in the game, this means it's the province that attracts the most people in the World. So you can actually turn New York city into a city-state World Power :D

I wish you had touched on Korea. In HPM they have a very stronk population comparable to some minor European nations, and they also get a decent number of resources and if you expand into Manchuria and China through conquest, which while difficult is not impossible, you get a fuck ton more pops and good resources, not to mention valuable research points to westernize with. After that it's kinda like a Japan game diplomatically but there will be a struggle to catch up as you don't have the literacy that the Japanese do. You also will have to challenge Japan eventually. It's pretty fun and I hope you do a video on it.

New Zealand is a pretty similar and fun game to Australia. Starting off with 2 provinces isn't as bad as it sounds; almost all your immigrants will go to Auckland and allow you to play tall building up North Island. I managed to get Auckland to have more pops than London by 1890, and I'm sure a decent player could find a way to take over Australia, which shares the same dominant culture. I saw someone on r/Victoria2 manage to get Auckland to 3 million pops by 1910 or so, with an exploit allowing 300 regiments from just that province.
Thailand, South Africa, Vietnam, New Zealand, Ethiopia, Tukulor Empire are all great fun to play with. The hardest and most cursed one is Ryukyu, as it accepts both Japanese and Han Chinese pops.
bolivia if you can survive the first pacific war and form the pbc is actually op as hell. you start with a strong liberal base, lots of space to expand southwards and you can accept pretty much all the native south American pops

I tried releasing Alaska as Russia. By 1870, had well over 2m pops (gold rush events ftw!). Conquered Hawaii, Ryuku and Fengtian before getting bored.
