Carolina Vinegar BBQ Sauce
Half Cup Brown Sugar
Pinch of Salt
1 Cup Ketchup
1/4 cup Hot Sauce
1 TBSP Onion Powder
1 TBSP Garlic Powder
1 Tsp Red Pepper Flakes
1 Tsp Black Pepper
Carolina Vinegar BBQ Sauce Cooking Instructions
Bring apple cider, brown sugar, and salt up to a boil and add the rest of your ingredients. Allow this to cook for 15 mins and allow to cool.
Boston Butt Recipe and Smoking Instructions
Trim meat of any excess fat that will not render in the smoking process. Trim the fat from the cross section of the boston butt. Use a binder (I used Olive Oil) and Season with your favorite BBQ rub. Preheat your smoker to 300 degrees and being smoking the boston butt. Every 45 mins spritz boston butt with apple cider vinegar and water blend to keep meat from drying out. When it reaches 150 degrees (about hour #4) wrap pork butt and smoke for the remaining time. When the boston butt reaches 205 degrees and probes tender remove from smoker and let it rest for an hour. Once rested remove bone and pull the pork. You can also use a couple of dashes of BBQ rub for additional flavor.

Hey boss I got trouble trying to figure this out. Do you put it at 300 or smoke on the settings Iâm not sure whatâs the right way to smoke meat.
Good question! If you are looking to maximize your smoke flavor always go with 250â°. If you do lower the temp it will increase the cook time. 300â° is a happy medium for me, it gives me enough smoke and cuts down on some of the time.
After you get your initial fire started I put the setting on 300â°.
